Oatmeal Bites

After the holidays I always seem to be snacky! Not necessarilly hungry but I have been so used to grazing on whatever is laying out..and it seemed to have just turned into a habit.
So to celebrate the new year I made a snack that contains a good ratio of carbs and proteins,  that will fill you up and not leave you reaching for that last cookie or bottomless nut bowl.
Oatmeal Bites!
(Pictures do these no justice..they were taken from my I phone, SLR is being cleaned! Food blogging can do some damage..Winking smile)
Oatmeal bites
  • 2 C. GF Oats/Old fashioned Oats
  • 1/4C. wheat germ (for gluten free use ground flax seed)
  • 1/4 flax seed
  • 1/3 C. chopped almonds
  • 1/2 C. chopped pistachios
  • 1/2 C. Cream Almond butter
  • 1/4 C. Agave Nectar
  • 1/3 C. Dried Cranberries.
Pre-heat oven to 325
Mix all ingredients together in a medium sized bowl until well combined

Spread coconut oil in the base of a mini muffin pan and press the mixture firmly into the pan.
Bake for 20-22 minutes
Remove and let cool completely!!!!
Separate them into portion size baggies 2 to a bag! And you have not only a healthy snack to graze on but to take “on the go”!
