3 meals.

Oh hey y'all. Its been a long long day. But it was beautiful outside today. So we took full advantage and guess what. I didn't take one picture. I soaked in the sun and lets face it. I had a baby or two in my arms at all times. Tonights post is going to be quick because Brent promised to rub my sore back ( from this workout) But I have to hurry so he doesn't fall asleep...SO you get 
3 meals in 3 minutes. (or less, depending on how fast you read)


Ready GO!


Breakfast

Classic Oatmeal. 



  • 1/2 C. Old fashioned oats
  • 2 tsp Chia seeds
  • handful of sliced almonds
  • 1/2 Scoop vanilla protein (Dymatize Elite)
  • Blueberries, Raspberries.

Lunch
Salad Beast

  • Romaine lettuce
  • Spinach
  • 1/4 of a oversized sweet potato
  • 1/2 sliced apple
  • 7 Asparagus sticks
  • Red bell pepper
  • 4 oz grilled chicken
  • Balsamic Vinagrette
And yes, that is a serving bowl. AND I killed it. Love love LOVE big salads like this. Fiber, Protein, Carb Veggie loaded and a little sweet on the side. I could eat this everyday.. oh wait.. I kind of do...

Dinner 
BBQ Chicken Pizza/Hot Pocket

  • Flat out whole wheat wrap
  • BBQ sauce as desired
  • Diced Grilled Chicken
  • Purple onion
  • Soy-Sation mozzarella "cheese"
Which I actually rolled up and ate like a ... HOT POCKET hahaha.. oh jim. you kill me. 

Post Dinner.. I was still hungry..
Green Smoothie 

  • 1 cup Vanilla unsweetened almond milk
  • 1 Scoop of Vanilla Whey Protein (Elite Dymatize) 
  • 7 or so ice cubes depending on your desired thickness --I like them thick! 
  • 2 handfuls of Spinach
  • 1 tsp of xantham gum
  • 1 tsp of Coconut + whatever I sprinkled on top for looks :)


Okay, so kind of like 4 meals and I bet you finished this in 1 minute.. unless you clicked and listened to Jim joke about hot pockets.. if you haven't you totally should.

..Beef Jerky..

When Brent and I go on a road trips. One thing is always required.. beef jerky. We both love to snack on it while we drive. We really only buy it when we go on trips.. because its a perfect high protein snack. But its  expensive, sometimes too salty, dry, chewy etc. also full of preservatives, some high fructose syrup.  So I decided I need to just make my own. So I can also eat it whenever I want and just not on special trips.
I don't have a dehydrator, which would be ideal... but I still made do without. It took time. But it was SO worth it. The beef jerky needs to marinate overnight so be sure to plan ahead :)

..Beef Jerky..

Ingredients

  • 1/2 lb lean top round sirloin beef roast, a little frozen still. (trim off the fat)
  • 2 tbsp water
  • 1/2 tsp of minced garlic
  • 1/4 tsp cayenne pepper
  • 1/4 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1 tsp. chili powder
  • 1/4 C. Worcestershire sauce

Instructions

1. Cut your roast into thin slices
2. Mix together all ingredients into a large bowl 
3. Place your beef slices in the bowl and cover and let marinate OVERNIGHT in the fridge. 
4. Place slices on baking sheet and roast at 175 degrees for 3 hrs.
5. Turn meat and continue to bake for 1-2 more hours until the meat is dry and flexible. (if it breaks, it baked for to long)
6. Eat. Put remaining (if any, this disappeared fast at my house.) jerky in airtight container and in the fridge. 


Now.. can we go on a trip?

Grilled Lime Salmon

Hi!! Hope you all had a great weekend! I have made several new recipes this weekend.. most seafood.. I seafood and I eat it ;) some baby food... Yay!! and devoured lots of kettle corn popcorn. mmmm...
But I know your all here to seafood...so here you go!

Grilled Lime Salmon



Ingredients

4 servings of Salmon
1/2 t. Minced garlic
1/4 of diced purple onion (depending on how much onion you like)

Sauce

1/3 C. Agave
1/3 C. Olive Oil
2 Limes.
pinch or two of cinnamon

Separate each piece of salmon into a piece of tinfoil, big enough to cover the entire piece of salmon
Mix all ingredients of the sauce together and evenly coat each slice of salmon and spread garlic and onion on top
Cover with the tinfoil making a tinfoil packet
Place on grill for about 20-25 minutes until salmon is cooked thoroughly.


I served mine along with broccoli, sweet potato with fat free cottage cheese and cantaloupe
Delicious, Healthy and perfect.

for the love of quiche

Yay!! Blogger finally is up and running again!! Yesterday, it kept saying "server rejected" when I tried to upload my photos.. and what is a post without pictures? ba oring... Anyhoo. Breakfast lately has been a whole lotta egg scrambles. Love them but I wanted more.. I wanted a quiche. It was amazing this morning and you all need to whip this up. Just sayin.. for the love of quiche.


..Breakfast Quiche..

Serves 4

Ingredients


  • 12 eggs. (yep, a dozen) 
  • 1 cup chopped broccoli
  • 1/2 C. chopped spinach
  • 1/4 C. diced purple onion
  • 1/2 of a red pepper
  • 1 cup Soy Sation Mozzarella Cheese (or low fat mozzarella would work)

side note: This is my new favorite "cheese", I like it better then daiya cheese.. it melts easy and taste delicious! 

Pre-heat oven to 350 degrees.


Chop all your veggies and toss into casserole dish


Break egg whites into dish, add 1/2 cup of cheese and stir everything together. 

Sprinkle the remaining cheese on top and bake in the oven for 20-25 minutes in the oven till edges are slightly brown. 

TA-DA!


Top with salsa and eat with a slice of toast.


This was a perfect breakfast! I will be making it again very soon. I'm excited to try it with mushrooms, maybe even some slices of sweet potato? The veggie load possiblities are endless ;)

I used to not... veggies are for dinner only.. I like carbs for breakfast....pancakes, waffles, cereal..  (what was I thinking?) Quiche is where it is at! Now I pretty much eat veggies for every meal.

dippity doo da.

Lay off me I'm starving... haha.. I don't know what happened.. but today I am SO hungry.. We all have days like this, I'm sure. But maybe it was running the half marathon, after the half I wasn't to hungry, yesterday I ate normal.. today.. I am a SNACK MONSTER..
I double taught this morning and even got the GPP workout in. But ate a good breakfast, recovery shake and some nut snackage..late lunch but not to late?  The monster grew even more later... so I decided, I needed some carbs, with protein and healthy fat to control the beast.
A little cottage, a little greek with some Peanut Butter..

Protein Fruit Dip was born.


..Protein Fruit Dip..

  • 1/2 C. vanilla greek yogurt
  • 1/2 C. cottage cheese
  • 2 Tbs. P.B
  • agave and cinnamon to taste.


Pour all the ingredients in your blender and blend on low/medium until smooth.


Transfer into a bowl

Grab and Fruit and tame the snack monster ;)

SO GOOD!!

If you ever have a snack attack like I did everyday today. Give this a whirl! It is almost dessert!

Moab Vaca

Thanks for all the congrats from the race post! As promised here are some pics of the hotel and more importantly meals.. and activities.

Once we finally got to our double wide hotel.. seriously.. it was like a long trailer.. with lots of rooms?

Really, I couldn't complain.. its my own fault for booking our hotel late.. as in 2 weeks to race day.. I was actually really lucky to get a room.. camping wouldn't of been very comfortable. 

After the race we went a several jeep trails! Gemini Bridges, Metal Masher & Steel Bender. Brent and I love jeeping and tackling crazy hills and schtuff.. (him a little more then me.. I turned into a wuss) 



We even went on a few hikes.. yes, I'm still in my running clothes, I felt good though. hiking was just the icing on the cake ;)

We had to take some time at the t-shirt shop in Moab! This place is a must in moab. You pick out a shirt or bring your own and pick a design for your shirt. They have hundreds! Brent and I already have a few shirts and decided the twinners needed their own. 



For dinner we ate at ZAX, Its an all you can eat pizza and salad bar joint in town. I went with the all you can eat Salad. I was craving some Veggies! (the waitress looked at me like I was crazy when I asked for a plate instead of the miniature salad bowl..)

Then Sunday we woke up in our fancy schmancy hotel and I whipped up some breakfast in the "kitchen" We bought some quaker, lower sugar packets. Come morning I realize we don't have bowls or spoons...
Improvise with coffee cup and straw.. 
Brown sugar quaker with some chocolate protein stirred in.. surprisingly.. I really enjoyed it.

After our improvised breakfast we went for a walk over my favorite bridge in Moab going over the Colorado River.

We already have two more trips planned in April! Can't wait!

{Moab Half Recap}

Hey everyone!! Back from MOAB! I had a great race and well deserved get-away with the husband. We left Friday afternoon and headed straight to the packet pick-up, grabbed some, not even picture worthy dinner at hogi-yogi and checked into our somewhat humorous, double wide hotel. (pictures to come in later post..)

We woke up bright and early on Saturday, I could hardly sleep I was so excited to just RUN! I ate a quick breakfast and grabbed some snackage since the race didn't even start till 10 am.


Stretched, layered (it was a bit chilly) and ready to head to the buses to meet my friend and ride up to the
starting line.


This was her very first race and she rocked it!! 


We got to the top, went to the bathroom.. (for the 3rd time) and then proceeded to the starting line.

I had a lot of GPP friends run also, every single one of these people are a total inspiration to me and they all kicked some serious asphalt ;)


It was windy, and cold at the beginning. Once I started running I warmed up a little bit, there was head wind.. not something I was prepared for. I hate running in wind, in fact during one of my runs last week I headed outside to do 5 miles and the wind was so strong I bagged it and turned around and ended up only doing 2 miles! Bad idea.. note to self: TRAIN in all ELEMENTS!

Around mile 6 I caught up with some friends from GPP again we held together for a little while then lost each other.

At about mile 10 two girls that I took/taught class with found me and I ran with them to the end! It was fun seeing them and catching up while keeping a 9:00 minute pace. They actually really helped me make it to the end.

I crossed the finish line with chip time of 1:59, finishing 30th in my age group.


Overall, The race was beautiful! we ran along the river and red rocks the whole time. The weather was... mediocre.. temperature was good, but the wind was a little rough and made it a bit chilly at times. Sometimes I wish we could control mother nature for perfect racing weather..

It was good having my husband there at the end cheering me on. He surprised me with some post race food, A NAKED juice and RASPBERRIES!!  I just love that man. 
one in a million man.

It was a great race and I would for sure recommend it to anyone, I'm already planning on it next year!! Its one of my favorites by far!

  • Mambas (I like them better then gu's)
  • I Pod with an amazing playlist
  • Extra chocolate mint gum! (lifesaver) 


Things I realize I should of had with me. 
  • Chapstick! (my lips were so dry from the wind)
  • Sunglasses/hat -- sand was blowing in my eyes 
  • IBU. yep, forgot it.

Time to Run!!

Just wanted to holler before heading out! We are leaving in a little while for MOAB! I'm all packed, my playlist is perfected and garmin charged. LETS GO! I'm ready to run!
