My Week in Tangents

Hey guys! I totally fell out of the blogosphere the past few days. But it has been a good week and I’m going to throw it all out in a few tangents.
#1 Sweet Potato Waffles.

These are good, the sweet potato makes them a perfect amount of sweetness. I found the recipe from Courtney! I followed it almost exactly, I used coconut milk and added a bit of liquid stevia.




Sweet Potato Waffles
Makes 5-6 waffles
  • 4 eggs
  • 1 cup egg whites
  • 4 oz. sweet potato
  • 1 tsp. baking soda
  • dash of sea salt
  • 1/3 cup unsweetened Coconut milk 
  • 1/2 cup + 2 tablespoons coconut flour
  • 4-5 drops of liquid stevia
I threw all ingredients in the blender

I forgot to spray my waffle iron the first round. #Fail. Nothing is worse then trying to clean a waffle iron!

#2 90 minutes of Body Pump in 97 degrees!

Thursday was the 2nd anniversary of skills fitness. We had a big celebration out in the parking lot! All the classes were outside and it was crazy hot. We all had a great time!

#3 I did my first truck pull

My friend Ashlan and I got called out to pull the truck. I haven’t ever attempted a truck pull and was intimidated at first but it wasn’t as tough as I thought it would be.




#4 NEW Protein.

I have had a problem with protein supplement lately. It’s the whey I’m guessing. I have been using a whey isolate that had zytrix in it that is supposed to aid with digestion but am still having problems. I love protein shakes, especially in the summer! They are my go-to meal, snack, post workout etc. when I’m to busy to actually make an actual meal. I didn’t want to have to take protein shakes out of my everyday diet. I just couldn’t… I only have 1 or 2 a day, but it’s a staple.  I have decided to switch over to a plant protein and egg protein. We ordered plant fusion (chocolate) and Elite egg (Vanilla). So far I have just had the plant fusion and I like it! I had it this morning and no stomach problems this far!


#5 Busters

#6 Blogger meet up!
This afternoon we headed out to liberty park in SLC.  Janetha set up a Utah blogger get together! We all brought a dish to share. I brought a chicken salad. --> to be shared later gator. It was SO fun to actually meet the blogger behind the blog and their dog or significant other or family.

We need to have these little get togethers more often! Seriously, I was there for two hours and didn’t get to meet or talk with everyone. Bloggers are pretty cool.

Back to the Barbell

This morning Brent went downstairs to workout and noticed the carpet was wet. He opened up our closet where are water heaters were and water was gushing out from the bottom of them..

Both of our water heaters broke! Brent called the “professionals” to get it taken care of ASAP. They showed up and gave Brent the bid to fix it.

This was not something you ever really want to pay for.. kind of like T.P or oil changes, but worse.

The technician left and came back to replace it. After 4 hours we had a bigger, brand new water heater!

I was very displeased with the service. The technician left several dents and a large hole in my wall, along with a big carpet stain.. ugh. We took pictures and called and complained to the company. For the price we paid, we expected a little professionalism on their part. We are hoping they step up and fix all that they damaged and do the right thing.

This morning I headed to GPP for this workout.

I used lighter weight and was a little over a minute slower then last time. Oh well, you can’t expect a new PR everyday. It just gives me something to work for again.

I came home and made a quick recovery shake for breakfast

A few weeks ago, I started teaching a teens class at GPP and these kids are inspiring to say the least. They work hard and I have not heard one complaint. They pretty much rock. They are pretty crafty with their water bottles after class to.

For lunch I wanted something quick and I didn’t have any water at the time due to that whole water heater replacement thing so I went for some tilapia and asparagus. I’m sure the tech downstairs thought I was crazy.. because I kind of forgot he was down there and busted out singing along to my Justin Bieber Pandora station… Boyfriend.. Embarrassing no?

Tonight, I taught Body Pump for the first time in a few weeks! Wow. I taught most of the new release, #82. I am loving all the functional movements they have thrown into some of the tracks such as jump squats, push-press and lots of pushups!

Afterwards, my friend Melissa and I decided to catch up while chatting away on the treadmill. My quad is still not up for running and the squats and lunge tracks in pump seemed to bug it so we just walked at a 15% incline at 4.0 speed for 30 minutes and switched over to the stair climber for about 15 minutes. Time flew by and it was fun to have Melissa there to keep me going. Thanks Melissa!

For dinner, Brent had grilled some chicken while I was gone but I was really wanting eggs for some reason so I had both.

I chopped up some chicken and poached two eggs with spinach and put them on top of some green beans. I topped it off with some tomatoes and some Walden farms honey mustard dressing.

Time to relax for the rest of the night before hitting the sack.

Campfire Dinner

So last night after I signed off I headed outside to join the fam for a little dinner. When I walked out, it was quite the sight to see.

Dinner over the fire is always the best. We had the following options and passed the sticks around, Family style.

  • Brown Trout
  • S’mores
  • Filet Mignon
  • Hot Dogs
  • Starburst.

Would you like meat and sugar for dinner?

I had some of the smoked trout, My dad seasoned it with lemon pepper and it was SO good.

For dessert I went for a roasted starburst! Have you ever tried this? You should! I love the morph starburst, cherry –> cherry lime--- ROASTED! It gives it a sugary crunch coat with warm gooey filling in the middle. Drooool.

There is something about hanging out around the fire that just brings family together, and I love it.

This morning we had a quick breakfast, I popped two waffles into the toaster and ate them right as they popped up while chatting away with my sister. I was still hungry so I popped down one more and made a egg puff with 2/3 C. of Egg Whites with some spinach and tossed it on top of the waffle.

Now that’s my kind of McMuffin! If I hadn’t of inhaled the two straight from the toaster and ate Bee’s while that one was in the toaster I would have had another. 4 waffles? NBD. Seriously. These waffles are packed with protein and low carb with the perfect amount of healthy fat.

 We Brent packed everything up and we headed home from the ranch so he could get into the office and do a little of that work thang.

We had a great weekend with my family I wasn’t ready to go home yet!

If I wasn’t such a city girl, I could live here. Freals.But only in the summer. Winters are brutal….

The ride down was pretty rough with the twinners but we must have wore them out because they slept the majority of the way home!

Road trip snacks are essential. Right before we left I checked out the fridge and pulled out some produce that had to go.

Cucumber and strawberries! Something sweet and something crunchy! I’m loving strawberries right now! The ride home is about 3 1/2 hours so these held me off just in time to get home.

Our house was 94 degrees inside! Oy. I remembered I had some coconut popsicles in the freezer and hoped it would cool me down a bit!

Brent and I headed to GPP to tackle the workout.

If you want to add a little challenge to a burpee, try a double pumper! Phew!

Last time I did this workout, I finished it in 23:31RX and today I did it in 22:58 RX! Whoop! A new PR.

I love a good sweat fest after a long vaca weekend week! I went beast mode on this sucker because it’s the only way I can get back into a gym mindset after a pretty relaxed weekend.

Sunday Happenings

Last night, we ended up going to Brave! Men in Black was actually our first choice but the first theater we went to did not accept credit cards. Since they only play one movie at a time there we headed to a new theater that opened down the street and Brave was starting right when we got there in 3D. Score!

My family offered to watch the twins for us so Brent and I could go see the movie together, just the two of us! I was pretty excited because I can’t even remember the last time we had gone to a movie together!! I have only been to two movies since the babies were born! Kids sure put a damper on the whole dating/ one on one time if you don’t make time for it. We have decided to make date nights more of a priority from now on. We had a blast together and both really enjoyed Brave. The meaning of the movie was simply to not take your loved ones for granted or they might turn into a bear forever. Maybe.

This morning we went to a church service, then came home for brunch. After a quick family photo op.

I made waffles again, these have become a staple in my diet lately. I love how light and fluffy they are. They also are low-carb, and high protein. This recipe makes quite a few waffles, so I throw the remaining waffles into the freezer so they are easily accessible for a quick and easy breakfast or snack throughout the remaining of the week by just tossing them in toaster!

I topped it my waffles with some strawberry jam and sliced strawberries.

After my dad took us to the Wyoming fish hatchery! It was cool to learn about how they breed different kinds of fish and raise them before selling them and releasing them into the wild.

We were able to see the fish in all stages of their life. They keep them in these blue troths until they grow a bit more to be transferred into outdoor tanks.

They separate the fish according to their growth and as they reach different stages they move them to bigger pools to allow more space for them to grow.

It was pretty interesting to see so many fish in one place.

After the fish hatchery, we headed home for Sunday dinner- Roast, potatoes and asparagus! Then I finally got to blow out some candles toothpicks for my birthday! (fresh out of candles. oops!)

We had two different kinds of pies- Turtle and Key Lime!

We played horseshoes and spent some more time out on the swings enjoying the beautiful weather and a little family time. Even Tikka is loving all the free range time she gets outside and play time with our other family dogs. (We are kennel training her at home.) I can’t get her to slow down!

We drove by the “airport.” To show T some planes because he is obsessed with planes, jeeps, trains and helicopters. This airport is more like a neighborhood for people to land their personal planes and park them in their hangers. We saw a deer just hanging out on somebody's  porch!

Now it is time for s’mores and were going to cook some fish my dad caught from the river last night and light some fireworks! Have a great Sunday night!
