Now, who wants a MUFFIN!?
BLUEBERRY PROTEIN MUFFINS
You need:
- 1 C. Old fashioned Oatmeal
- 1/2 C. Oat Flour
- 1/2 container of vanilla greek yogurt
- 4 scoops of vanilla creme Elite protein powder (any vanilla would work)
- 1/4 C flax seed
- 1/2 C Applesauce
- 1 C. Fresh Blueberries
- 1/2 tsp Baking Powder
- 1 tsp Baking Soda
Pre-heat oven to 350
Mix all ingredients together and fold in the blueberries last (It will be thick)
Line cupcake pan with your cupcake cups and spray with canola oil (or pam) and place a spoonful or two into the cups.
Bake for 15 minutes

ReplyDeleteOkay so I made these muffins today and they did not turn out anything like yours :( I followed your recipe exactly (I think) when you say half a container of vanilla greek yogurt, your talking about the single serve container right?Not the big family size? I used 1/2 of a chobani single serve container and they were flat and hard.
ReplyDeleteIt needs to be a full size container. About 1/2 to a 1 Cup of yogurt. I substitute low fat cottage cheese if I have it around or if it is on sale.
DeleteI made these with 1/2 cup of yogurt and they were still dry and tasteless. Any suggestions?
