Cyclops & Cookies!

So last night, my eye was bugging me a little bit so I put a warm compress on it before I went to bed.. woke up in the middle of the night to it throbbing so I threw some frozen peas on there and woke up to my eye completely swollen and with lots of eye boogers :..(  I got some more heat on it and climbed back into bed.. I woke up at about 8:30am fed the babies and the swelling had gone down a little bit but it still really hurt.. I really don't like going to the Dr. So I just got some more heat on it and went back to bed.. you know, I am one of those people who believe I can just sleep it will magically disappear.. it didn't work for labor..and it didn't work today.. My eye is still really swollen and I can barely see.. But cyclops still has to eat right?

So for my breakfast I was in a chocolate mood..(what I didn't feel good, okay?)

Chocolate Elite whey protein
1 tbs of freshly ground PB
1/2 cup of almond milk 
1/2 banana
Ice

It was delicious!! You can use normal milk, store bought PB if you would like. But I'll tell you why I use this..


Well, maybe I'll just show you..


I'm lactose intolerant.. fun huh.. but I still eat some dairy.. but try to supplement when possible.. cause I just love it. Anyhoo.. Almond milk is lactose free and has healthy fat and well, you can read most of it.. Now.. I usually buy the unsweetened almond milk but Mr. B did the grocery shopping this time so I just roll with it.. So the sugar is higher then usual but its natural sugar not added :) I love all the health benefits of it.. you can check it out here.

In mist of my eye.. I figured some chocolate chip cookies would help me feel better! Don't they make everything better??

But of course I put my own little healthy twist on them..
I found this vegan chocolate chip cookie recipe here. Thanks! & Janetha also conjured up some as well :) I'm not a vegan but I do just like to experiment with different recipes..
I changed a few things & added a little here and there..
You will need.

  • 1 cup whole wheat pastry flour

  • 1 scoop of vanilla protein powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/4 cup of baby apple sauce (yes, baby food, its lower in calorie and sugar. 

  • 1/4 cup nut butter (I used the freshly ground peanut butter)

  • 1/4 packed brown sugar

  • 1/2 cup AGAVE NECTAR

  • 1/2 teaspoon vanilla extract

  • 1 “flax egg” (1 Tablespoon ground flax mixed with 3 T. water)

  • 1 cup carob chips

  • splash of almond or soy milk to moisten

  • Preheat oven to 375 degrees.
    Combine flour, baking soda and salt in small bowl. 

    Beat nut butter,  baby applesauce, agave, brown sugar and vanilla extract in large mixer bowl until creamy. Add flax egg, beating well. ( I just used my handy blender,  I still need to invest in a kitchen aid)


    Gradually beat in flour mixture. (I just stirred it in with my dry ingredients)

     Stir in morsels and a splash of milk, if necessary.
    (you can use normal choc. chips if desired, I just like these, lower sugar and less calories, high antioxidant)

     Drop by rounded tablespoon onto baking sheet sprayed with cooking spray.

    Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
    They are healthy and nutritious!! These you can't be guilty about.. 
    & yes.. they did make me feel better.. 
    Mr. B even cleaned it up!
    For lunch I snacked on some peppers and egg whites with  hummus 

    I'm not a good egg peeler, so don't judge haha! 

    Then I had two pieces of ezekiel cinnamon raisin bread

    Its delicious.. You can find it at any WHOLE FOODS store.. 

    Needless to say its been a relaxing day just hanging out in our Jammers, sleeping, eating, watching movies.. But since we have a limited number of beautiful Sundays.. cyclops is going to go for a walk with my little family.. maybe it will take my mind off of the throbbing eye..& I'm sure staring at the computer screen isn't helping either...

    1. I hope it's not pink eye! It's pretty painful and really contagious. I'd get it checked if it's not better in the next few days!
