It is still freezing in Utah… I think we will be lucky if we get over 30 degrees today…
Today I have a yummy and EASY recipe for you to tackle and hopefully warm you up a bit if you are stuck in frigid temperatures like me.
Did anyone watch “The Bachelor” last night.
I will admit, I give in to the drama of it all! I know I’m not alone..I think the best part of the show last night was when one girl did a back walk over and landed on her head…

I whipped together a quick dinner before settling in on the couch for the drama.
I am not a soup person.
It is just not the first thing that I think of when I am hungry. I can never find it filling enough. But last night after a quick run at the gym I really wanted soup!?
I had some butternut squash in my fridge all diced and ready to go. (Thanks Costco!) I pulled another few simple ingredients together and made up a quick serve soup!
Simply Healthy Butternut Squash Soup!
- 1 package of butternut squash or one 3 lb squash diced
- 1 TBS Coconut Oil
- 5 Cups Organic Vegetable Broth (Low Sodium)
- 1 tsp. Nutmeg
- Salt and Pepper to taste
In a large pan with a steam basket fill bottom of pan with water, steam butternut squash until soft.
Once soft, put squash into blender (I have a blendtec) Add remaining ingredients and blend until smooth!
Note: If you like thicker soup add less broth.
It doesn’t’ get much simpler then that! Have some sort of protein on the side to complete the meal!
Butternut Squash soup was filling and comforting to end the day!
