This morning I slept in and woke up really craving eggs. I made a dippy egg + 1 egg white and tossed it on a piece of brown rice toast.
I love breaking it up and letting the yolk soak into the bread. I don’t think I could ever give up egg yolks.. ever. I love the drip!
My quick breakfast served as fuel for my workout today at GPP
I love OTC workouts! (OTC= On Trainers Count.) These type of workouts among several other things are what make GPP stand out from other gyms. These are legit, and I always seem to work up a sweat without moving from one spot. I used a #25 for the Single Leg Deadlifts and I am sure I may regret that decision in the morning… I used the #25 for the rows as well, I really do love doing those rows, it may be one of my favorite. Then ran one mile with my girls to shake it all off.
After the workout I came home and made a quick recovery shake. Every muscle in my body felt pretty fatigued… Recover shake to the rescue!
In the mix-
- 1 scoop vanilla fitmixer
- 1 cup vanilla almond milk
- 1/2 Peach
- 1/2 Banana
- Ice
KSL INTERVIEW
This afternoon I had the opportunity to be interviewed by Darin with KSL Studio 5!
He just asked me all about running and exactly why I enjoy running races and why I would pay to do such a crazy thing. I will post the segment as soon as it airs!
Here I am all ready to go! PS. I finally got my hair done yesterday, maybe I’ll wear it down all day today…

After the interview I came home and made a quick Tuna salad with spinach and had a apple on the side.
Tuna Salad
Ingredients:
- 1 packet of white tuna (low sodium)
- 1 Tbs vegenaise with flax seed oil
- 1/4 Diced tomato
- Cracked Pepper (as desired)
Directions:
Mix all ingredients together
Serve on top of lettuce/spinach or add it to a tortilla and make it a wrap!
Quick and easy!
I spent the rest of the day, getting some stuff done around home, and packing because I’m heading out tomorrow after body pump for a last weekend at the family ranch before all that white stuff comes.

Why should you or Why do you run organized races?
Running organized races is an excellent way to make friends who also enjoy running and can help you stay motivated. It's also an opportunitity to see where you need to improve and also to celebrate your successes. They aren't that expensive and a lot of fun to be able to proudly say, I did that!
