muesli craze..

So no oats this morning for breakfast! Shocker.. I know..

I actually had Muesli.. which is actually like Oats, with a few additions!! You have whole grain oats, wheat, rye, triticale and barley with pieces of dates, raisins and my favorite... Sunflower seeds, almonds and walnuts!
You can eat it cold or hot!! Since its still cold outside.. (I'm so over the cold).. but alas..
I even threw in some blueberries ;)

As I was inhaling enjoying my bowl of muesli I was reading the bag (you know, like when you were a kid reading the back of a cereal box) and lo and behold there was a recipe for cookies!!!   Muesli chocolate chip cookies.. Why not? I'm always up for a cookie. I actually followed the recipe on the Bobs Red Mill bag.. (that hardly ever happens) Thanks, Bob!

  • 1 cup of Muesli
  • 3/4 C. Sifted whole wheat flour
  • 2/3 C. Applesauce
  • 3/4 C. Brown sugar
  • 6 oz. bag Chocolate chips
  • 1/2 tsp Salt
  • 1/2 tsp Vanilla
  • 1 egg

Heat oven to 365 degrees, Sift flour, baking soda and salt together and set aside

Blend applesauce, sugar and vanilla together and beat in egg.

Add flour mixture and mix. Stir in Muesli and chocolate chips.

Drop by tablespoonfuls on lightly greased cookie sheet.
Blop..

Bake for 10-12 minutes.
Yields about 16 cookies

Well.. did Bob know what was up?.. No.. no, he didn't.. The cookies did not taste bad.. but they were flat as a pancake.. (maybe just another breakfast form?) Not the dessert I expected.. But I still gobbled them up!

Would I make these again? Yes, but would change the recipe somehow.. so they are fluffier, thick, and gooey cookies. Not pancakes.

The cookies might of been a flop.. But a least someone enjoyed his peas.
