Workout: 30 min. swim, GPP, Body Attack
This weekend went by fast… to fast. Back to the grind. But at least it went out with a bang. And this week is off to a great start!
It’s tradition in my family to have crepes on conference weekend, Even when I lived at home we did this and its something I want to carry on with my family. Although, I’m still sticking to whole 30 I wasn’t going to let that break tradition! I invited my BIL & SIL over to join us for our little brunch.
This recipe fit the criteria of “paleo friendly” so I got to work.
Adapted from here:
- 4 whole eggs
- 3 egg white
- 1 C. Almond Milk
- 4 T. Coconut Flour
- 2 tsp. Vanilla extract
- Put all ingredients into blender.
- Blend on medium until well combined
- Heat skillet to medium-hot and spray with olive oil
- Pour batter onto skillet
- As soon as you pour it, pick up the skillet and roll the batter around until thin
- Let cook for about a minute
- No need to flip the crepe!
I collected a variety of toppings for the crepes- pan roasted veggies, strawberries, bananas, vanilla Greek yogurt. white chocolate cream cheese, mini chocolate chips, powdered sugar and maple syrup.
Obviously, some toppings I couldn’t have but I didn’t feel restricted at all and was able to get my sweet & savory craving in.
I filled one crepe with the veggies with added avocado and topped with tomatoes (should have had some salsa..).
Then filled the other with strawberries and bananas and I ended up throwing some strawberries into the blender on high to make a “strawberry syrup”. No added sugar, just plain strawberries and it was delicious!

Brent and I have decided to add to our family…
Nope, no baby. Sorry.
We want a dog.
I know it seems a little crazy, but both Brent and I love dogs and we miss having a pup. We used to have a couple poms that we absolutely LOVED but after our Sadie died, and we had to get give our other one up because she wasn’t very well behaved once the babies were born.
I have been looking into different breeds for awhile,
I’m going to be pretty picky about it. Its got some big paws to fill.
Sadie was the best dog in the world…
We created a list of requirements and have narrowed it down to two breeds:
- Can handle long runs with me
- Hikes, hunting, and biking with Brent
- Be able to tolerate two 20 month olds
- Eager to learn
- Gets along with other dogs.
- Low maintenance (I don’t want to have to bathe her every week..)
- No shedding
- Medium size
- Friendly, active, and gentle.
- Spayed, up to date on shots.
- Potty trained
We are on the search. We are looking for a young dog but not a puppy. We are up to adopting/rescuing one. Let me know if you have any other recommendations that fit our criteria and if you have any connections!
