Round 2


Good Morning!!!---uh.. night now.. didn't have time to finish and publish the post this morning... But...I guess the cat is out of the bag, I was given the oppurtunity to do another workout wednesday news segment for my local news station! This was my second time doing it and I love it! If you missed the first time you can check it out here!  



The subject today was preparing healthy school lunches and after-school snacks for your children! 

During the segment I was able to review what to avoid when packing your children's lunch.-

A lot of people send a prepackaged lunch AKA lunchables, bags of chips, cookies, juice boxes etc. to school with their child each and every day without even realizing it has very little nutrition and is full of highly chemical processed foods! 
Preparing their meals in advance will ensure a fresh and healthy meal that will help them feel better and even perform better in school! 

What do you want to avoid in a sack lunch?

*Avoid ingredients such as HFCS, hidden syrups, and artificial sweetners. 

*Avoid high fat, saturated fat, trans fat and foods high in sodium--->( pre-packaged deli meat!)

* Fruit juice boxes and Soda: Some juices are misleading and are not 100% juice and are packed with sugar!! Stick with mini water bottles, or milk

*Check out the nutrtion label AND the ingredient list! That is where you will see these ingredients and you want to stay away from them!

What should we look for in a healthy lunch?

* Fresh fruit and veggies, nuts, seeds as well as lean meat and protein

* Think about fun ways to present them, sometimes its hard to feed your children fresh, healthy food, especially if their not use to it. Be sure to discuss the importance of eating healthy so their bodies can grow healthy and strong.

What if you don't have time to make a sandwich or cut fruit/veggies?

*Plan in advance! If you know tomorrow morning is going to be a crazy one, prepare it the night before.

* Cut extra fruit and veggies and keep them in the fridge for quick access. 

*There are healthy options such as freeze dried fruits or dried fruits and veggies that are pre-packaged that would be a healthier option then a bag of potato chips.

Here are some of the ideas I shared on the segment today! 

Fruit Skewers


  • 1 C. grapes
  • 1 C. strawberries cut in half
  • 1 C. peaches
  • 1 C. bananas
  • 1 C. Kiwi
(you may use any fruit)

Directions

1 Take skewer and poke the fruit and layer as desired! How much fruit can you fit on a stick?
2. Dip in greek yogurt!

Turkey Rolls


  • Whole wheat tortilla 
  • Fat free Cream cheese
  • American/provolone cheese
  • Tomato
  • Lettuce
  • Toothpicks if needed

Directions

1. Spread 2 tbs of fat free cream cheese on whole wheat tortilla
2. Layer Turkey, cheese, tomato, lettuce

3. Roll up tortilla as tight as possible and slice (use toothpick to hold together if needed)

step into my office

I'm just getting ready to take off for the cache-teton mountain EPIC relay! (that is quite the mouthful)...
This day has been a little crazy, probably due to the fact I've been procrastinating spending time playing and watching T walk and around!! My week long TO-DO list is getting done in one day though! For that I am proud!
I have moved my laptop from here

Welcome to my office!
I've decided that the laptop doesn't make a great drumset for the babies, So I have had to move it about a foot away and 4 arm lengths away;)


Breakfast was a muffin! A little less then stellar today due to the fact I started making it and realized 2 things.
1. I didn't have any eggs. Shocking I know but all 3 dozen were boiled...
2. I don't have any pumpkin puree in my pantry.. due to the grocery store calling it a "seasonal product"
whaaat?

oh well.. I'll make do.

1. Make Flax egg.





2. Applesauce instead of pumpkin.

3. Add 2 tbs original unsweetened almond milk


end result?




Fail.. not so yum, but it kinda worked?.. if you love flax... at least I'll be regular right;) You win some you lose some...



Lunch was fantastic and I know your going to jealous of this goolush..

How to-
Open fridge- Take everything you have leftover from other meals and throw into a bowl and reheat.
Classic meal around here lately and I'm not even ashamed.


The twinners got to go visit the Doctor today. They had a great time, shots and all! The Doctor was very impressed with them. I am a proud momma!

I have made potato fries, and granola! Recipe comin' atcha a little later. I got all my race snacks prepared and I'm ready to run.. 48+ hours in a van sounds fantastic right? I actually am really excited. Our last one was a blast!!

Shopping for shoes!

Tonight I will be announcing the winner to the GIVEAWAY! So don't forget to go enter! 

Today started out with a early morning workout! With my pre-workout fuel I headed to the gym.
After completing this workout, I completed 100 situps and went for 1.5 mile run. WOW, running after thrusters and burpees makes you feel like your running with 100 pounds dragging behind you! Lets just say it was one of those days I was happy my run was cut short because I had to get to work.

I was craving one thing..

Strawberry-Coconut Protein Shake


This hit the spot! It was so sweet!!!


  • 1.5 C. Almond Milk Unsweetnened
  • 5-6 Ice cubes
  • 1 scoop of Vanilla Protein by Elite
  • 4 Frozen Strawberries
  • 1 tbs  Coconut syrup
  • 1 tbs  Chia seeds
  • 2 handfuls of spinach (doesn't alter the flavor AT ALL)


Today at work went by quick! I love busy days! I snacked on some trail mix throughout the day.

I may or may not of selectively picked out each handful :) cashews, m&m's, and raisins.

After my long work day.. (4 whole hours) I snagged some chocolate for some shopping fuel.
dark chocolate + almonds = winner!!

Remember these shoes? I wore them a few times and then Liz informed me that I should probably get a half size bigger and of course I head to every piece of advice and she was able to take them off my hands so I went back to the mall and found a better fit and a comfy fit..

While I was shopping I ran into a blog reader! (Hi Cindy!!) We had a good time chatting about our need for new shoes and both ended up purchasing 2 pair!


Don't you just love them!?

Coral is one of my favorite colors and it makes them just pop out! They are the new balance vibrams.


 I have been researching vibrams for awhile now but just couldn't wrap my head around the separate toes thing. They have the same bottom of the vibrams with all the benefits, but you don't have the toe separation! I can't wait to test them out!

Comfy fit?


 I couldn't resist TOMS! I tried them on and had to have them! Bonus: They are Brents favorite color so I knew he would be totally okay with the purchase.. oh and I had a gift card.. Double bonus!


After shopping I headed home to the babes and of course for lunch, I was actually really wanting another strawberry coconut shake because it was SOO good but figured a veggie full salad would satisfy! I had some salmon in the fridge and tossed it on top of some fresh romaine lettuce from the garden (Thanks Judy!) Along with some red pepper and baked sweet potato! Drizzled with a little olive oil and sea salt.


And of course a crunchy Gala Apple!


Perfect lunch!

Its a hot day today! I'm whipping up a perfect post workout treat.. but I think we need to go swim first. Someone is getting ancy.
Even though they hate the pool I am determined to get them to like it.
