Hey everyone! Hope you all had a great weekend! Sunday was pretty lax for us, we spent most of the day up at my dads enjoying the last “nice” weekend in the backyard. It is supposed to rain the rest of the week.
Last week I found a “new to me squash” on Laura’s blog. She had made fries out of it and I figured I would give them a shot, since I have a love for fries that aren’t “french fries”
I give you..
A delicate
Now, I know what your thinking.. What the heck is that?!
I thought the same thing. After googling it and learning how to correctly pronounce it –“de-lee-ti-cah” NOT “del-i-kah-ti”. Although, I still got a weird luck from the guy in the produce section when I asked where they were located.
A delicate is a sweet squash, full of vitamin A and vitamin C, and full of fiber. 1 cup contains about 100 calories.
Being a fan of sweet potato fries I knew this would be delicious!
{Delicate Fries}
Ingredients
- 1 delicate
- Olive oil
- Paprika, Mrs. Dash (any desired seasonings would work)
Directions
Pre-heat oven to 400 degrees
Slice delicate in Half,
Then cut the long way and remove the seeds aka guts out with a spoon.
*you can roast the seeds if you want!
Then cut in half again, continue until you have your desired thickness of fries. *(thicker they are the longer they will need to bake.)
Spread them on a cookie sheet and lightly coat them with olive oil and sprinkle desired amount of seasonings, I used paprika and Mrs. Dash
Bake for 15-20 minutes and ENJOY!
These were SO good! We snacked on them for a quick mid-afternoon snack but they would make a perfect side dish for your last BBQ of the year. Your kids may even like them! T was even a fan!

My favorite is the spaghetti squash but I love discovering new ones!
