♥3 years♥

3 years ago, I married the love of my life. Brent and I have known eachother since we were sophmores in high school. We started dating when we were seniors and after a year of dating, a two year mission in the LDS church and a few more months of courtship.. We were wooed.. I mean .. wed.

Today has been wonderful, Brent surprised me by leaving for work and coming back with these beauties


For Breakfast I had
7 grain oats with strawberries, blueberries and a 1/2 scoop of vanilla protein.

We had a friend watch the babies (thanks, amanda!) So the Mr. and I could spend some time together
I picked him up at work and we went to lunch at Au Naturale in Sugarhouse. In SLC. 
It was our first time there and it was awesome! I loved it!! 

Everything they make is fresh and well.. Au Naturale..
Brent got a turkey burger with Sweet Potato fries! 
Can I just say HOW good these fries are..
1st off, they are sweet potatoes.. and 2nd they are baked and oven roasted!!! 
No grease and grime.

I played it safe with a kids meal... a turkey sandwich on a whole grain bun..


I stole half of the misters turkey burger and he ate half of my turkey sandwich and I devoured about more then half of the potato fries..

And the kids meal came with a slice gala apple and chocolate milk.

Tonight we are going to the ROOF for dinner!! We actually got engaged on November 17,2007 in temple square and we ate their after and have had dinner there on our anniversary ever since!

re-cap

Hey everyone! I hope your having a super superbowl Sunday! Mister left to watch the game with his fam already..while I wait until two sleepy babies wake up and are ready to join in on the fun.. I thought I might as well re-cap yesterday. 
After a awesome Body Pump class, it was time for a training run. I decided that I didn't want to run by myself.. but who would I really talk into wanting to go to run 10 miles in the freezing cold??
It didn't take much negotiation ;)

This is Aspen, my parents dog, She is a Yellow lab full of energy.. so I decided she wouldn't complain.. 
and she didn't.. but guess who else wanted in on the fun?
Don't ask me how I got them away from the x-box.. but they agreed.. all 3 of them.. 
(you see J across the street?)

These handsome boys are my brothers! I was shocked.. I will admit I threw a orange leaf trip if they would keep up with me. 
They made it till about mile 6.
I took them anyway. 
What studs. 



I finished 10.41 in 1:43. Bring on the 1/2 
Glad to have the long run out of the way.. 
The rest of the day was full of errands, a birthday party and more errands. I don't think I sat down ALL DAY.. and or took a single pic of the craziness.. But thats the life. 


Later that night I was craving some RED MANGO
We shared a original with raspberries and granola! 
this is the perfect mixture!! 
..Love it..

Games on! Which means commercials are up! 
Time to go!

Tomorrow is our 3 year anniversary!! I can't even believe its been 3 years since we got married!!
I love him so much and always will.
We have a fun dinner planned tomorrow.. and I'm not making it. ;)

SUPERBOWL SALSA!!

Hey everyone! Sorry for such a late post.. Its been a cahrazy day.. But I wanted to get this recipe out there because its by far the best salsa ever.. No pics yet. Just cause I have not had time to make it.. but hopefully you do before tomorrow..

{SUPERBOWL SALSA}

..Ingredients..


10 dried red chiles (they in the mexican food aisle, chile arbol or El Guapo)

6 tomatillos
2 tomatos
1/2 white onion
1 avocado
1 bushel cilantro


salt & garlic as desired


..How to make..


  1. Roast tomatillos (remove stems and leaves). Roast by wrapping them in foil then placing them on a frying pan. They will steam in the foil and will be done when they are a brown color or if some of them burn to the foil.. but that just gives it a little extra flava! note: they don't smell very good.. 


.Roast the chiles, place dried chiles on a frying pan until browned on each side, add them to the blender. The more you add the hotter it gets.. I start with about 6 and see how it taste before adding more.


Dice tomatoes -- add to tomatill/chile blend in a container do not blend
Dice onion, cilantro and avocado and add it to the mix
Taste test and add salt/garlic to taste!
Serve with tortilla chips! Or my personal fave, marys crackers. 




Off to RED MANGO!! mmm.. wonder what ill get??

its a dogs day.



Hey everyone!! So happy its FRIDAY!! But today was kind of a sad day.. it is Sadies birthday.. Sadie was my pomeranian, that really was my first child.. ask anyone.. She was the cutest, most spoiled dog in the universe! Sadly, she was poisoned by a dog hater in the neighborhood.. :( I miss this little pup.

I went back to work, just on friday. The Mr. gets to play Mr. MOM.. and I think he likes it and I like the break. 
So for breakfast I had a chobani yogurt..
pineapple 

with a little vanilla granola on top! and about 6 handfuls later..
it was gone. ;)

 For Lunch I just had a green monster
(I have a lot of spinach to use up;))
and I visited on of my fave stores.. Sunflower Market.. best, & cheapest produce.
I was still hungry so I grabbed a bar

It was ho hum.. not bad.. but it was no peanut butter..

MyTRI

This year, I set out a goal to actually complete a triathlon, A triathlon consists of a swim, bike and run.
Well, today I have my own tri to do..(MYTRI) but it will consist of  swim, Gpp, Body Attack.
I picked up another class at a brand new gym in town. Since I lost two classes.. I have been on the search to pick up another. Tonight is my first class there and I couldn't be more excited. I love to teach! I can't wait to meet new people and hopefully leave a lasting impression... that they will feel tomorrow ;)

This morning I hit off the beginning of the mytri at the pool.
After a quick Pre-workout snack
+ the rest of the naner with more PB scoops ;)

I love swimming in the morning. I'll admit, waking up at 4:30 am is a little rough but as soon as I hit the water it felt good to be up! We swam for about an hour before the elderly swim class took over. One day, I'll join them. ;) I hit up GPP right after. LOVED todays workout! Killer cardio fo sure.
Came home and actually the cold weather hit me with a craving for some PRO-Co
Cozy warm. 

Favorite snack of the day..
Marys "Crack" crackers..
I call them crack.. because they are just as addicting as vanilla almond granola!!

{Vanilla Almond Granola}

Hey Everyone!! Its almost Friday!!! I can't tell you HOW great that is. I actually think we might hit double digits over the weekend.. Because yesterday ...

Alriiiiiighty then.. so it doesn't look like we will be even close to double digit.. (insert sad face here)

With these frigid temps, I can't run outside and have been forced to the do so on the dreadmill. Training for a spring half marathon is tough work in Utah, or anywhere in the Midwest.. or East.. Is it warm anywhere right now?? Florida? I'm coming your way..
Despite my hate for running on the treadmill I was able to get it dooooone..
I was really supposed to just do 3, but I really got into "live to dance". Did anyone catch that show? It was the finale. It was my first time watching. It made me reeeeally miss dancing. 
I left a schweaty mess.

EXCITING NEWS.. 

The Misters brother got ENGAGED last night!! YAY! for weddings!! We love his fiance, she is a doll.

She is showing off the bling.. Can you say huge? Beautiful ring for a beautiful girl!

Its no secret, that I love Bear Naked granola.. 
Love love love.
They have great flavors and they are all made with pure, all natural ingredients. 

Well. guess what? I ate it all.. and it was to cold to go out and get more. 
So I made my own little variation! .... then I made more. 

{Vanilla Almond Granola}

{Ingredients}

2 Cups Old fashioned Oats
1 Cup brown rice cereal
3 scoops of vanilla Elite Protein
1 T. Vanilla Extract
1/4 C. Agave Nectar
1 T Cinnamon
1/2 C. Sliced Almonds (you can use any kind of nut)
1/4 C. Flax seeds
1 T Canola Oil
4 T Water
(if you want it a little sweeter add a Tablespoon or 2 of truvia/stevia)
Preheat oven 325 degrees
Mix it all together

Line cookie sheet pan with tinfoil (easy clean up)
Spray with canola oil 
Spread the granola on the pan
and bake for 15 minutes
Mix it around and continue to bake for 15 minutes
 and mix again and one final time only for about 10 minutes
until it slightly brown on top.

Let cool

Eat as much as your little heart desires.. 

Awesome high protein snack that will keep you full!
  • Eat it straight out of the oven
  • Put it in Milk
  • Great topping on your favorite Greek yogurt

Take me away..

Hey everyone!! It is fa reakin izzing.. outside!!


This might just put a damper in this weeks training runs.. I'm sorry but snotscicles are NOT my style.. 
What I would give to be in a warmer climate right about now!! Take me away! 

Cold weather kind of bums me out.. I'm totally a summer girl through and through.. But what makes any woman feel better? 
CHOCOLATE! 
Even better, Chocolate and PB!
That's what I had for breakfast!


1/2 C. Old fashioned Oats cooked in the microwave with water for 1 minute
1/2 scoop of Elite Chocolate Whey Protein
1 Tbs of Cocoa Powder 
1 Tbs of freshly ground PB
1 TBS of Agave Nectar


..LOVE..

In fact.. this made me feel better about the chilly weather. Warm, chocolate, peanut butter goodness. 
Did you see the rest of weeks forecast. .Chocolate PB oats will be definitely be a repeat this week. 

Its cold days like today, that I hibernate inside and get stuff done around the house
wish me luck. 

Right after a shake.. 

I know.. it looks gross.. But I was actually going for a almond joy shake. I just have A LOT of spinach.. (thanks costco) So I thought, Why not?! So just threw in a few handfuls.. 
Chocolate Protein + Spinach= ugly color
 It was still delicious..and I drank the entire thing. 
don't knock it till you try it ;)
