Two days time

Hey guys! Sorry for the Hiatus on the blog! It has been a crazy past two days and at the end of the day I chose sleep over the blog.
I promise I love you all just as much. Sleep even trumped showering… (Just kidding, kind of.)
Here is a quick recap of the past two days!

Day 3 of 2-a-days started at 6 am with a fun hike/run up my favorite trail in Bountiful. I think I could run this everyday and never get sick of it. Not to mention if all these peeps do it with me! When we started it was still pretty dark outside, bonus was we got to watch the sunrise.
Breakfast has been the same thing the past few days. Exciting I know.

Egg whites with a veggie and fruit pre-workout- (I can’t really workout with a full stomach, so I make sure to wake up early enough to let this digest a bit before the workout.)

Post workout has been a protein shake to help with a quick recovery. Some days these meals have been swapped, depending on the time I workout.

Even T likes his daily dose of protein powder.

Along with 2 a-days, we are following a structured meal plan as well so needless to say, my lunch has been the same salad all week with a few different veggies in the mix.

So far I have been doing perfect on the diet and the workouts. I only have 2 left! This week has been challenging and hard but at the same time it has been SO much fun. The power of community is addicting and motivating. It has been a great experience! Even the ladders that we did last night..

Readers Request:
I recently received a readers request for a lunge workout, ----> Ask and you shall receive! This can be done while holding weights if you would like. If you are new to working out I would cut the reps in half and just use your body weight.

Just like that, those legs and booty will be burnin’!

Last night we celebrated my little brothers birthday with the family. His actual Birthday is TODAY!

He just found out yesterday that he broke his foot sometime last week and has been playing football with it all week! Now its in a cast and he uses crutches! He is a fast healer.. we hope!
He sure is a great uncle to these two!

Tomorrow morning is the last workout of RX + week at GPP and it will be a two hour event in which I have to follow up with body pump! What a Saturday!

Olympic Test

Happy Monday!!
I hope your week got off to a good start today, and if not, tomorrow is a new day right?!
We had a great weekend!

I know this picture has been posted on about a million other blogs, but how amazing are these women! Seriously. When Flanagan crossed the finish line and fell to her knees I just wanted to get down and crawl over to her and pick her up.I have never ran a marathon in 2:37? and probably never will..  What a team. They inspire me for sure!

This morning I had planned to go to GPP first thing but a certain little boy woke up at 4:30 am and demanded blues clues. Yep. Blues Clues. Three hours to be exact. I tried to fall asleep but was interrupted after every episode… MAAAAILTIIIIME….
I decided to push back my workout to a later time in the morning and made a little breakfast in hopes to catch a little energy.
Breakfast:

3 eggs + 1 whole egg, spinach, mushrooms, and peppers. Along with half of a frozen banana and almond butter that was devoured while my eggs cooked.
Mid morning I whipped up a protein shake to take on the go for post workout, along with lunch because I had some errands to run this afternoon and knew I wouldn’t make it home in time for lunch.

In the mix:
  • 1 C. Almond milk Vanilla unsweetened
  • 1/2 banana
  • 2 handfuls spinach
  • 1 scoop elite Egg Vanilla
  • 1 tsp. lemon juice
  • Ice
Workout:
I went to GPP for the WOD then did a quick 3 mile run after.
Lunch:
I totally ate in the car while running errands- Lucky me even forgot a fork. Totally classy.

When I got home and got the twinners down for a nap I was craving cake.
Microwave Blueberry Muffin

I haven’t made one of these forever. Mainly because I only have ONE can of pumpkin left…

Mix together:
  • 1/2 C. pumpkin
  • 1/2 C. egg whites
  • 2 Tbsp. Coconut Flour
  • 1 tsp. Cinnamon
  • 1/4 tsp. Baking Powder
  • 3-4 drops of NuStevia Vanilla Drops
  • 1/4 C. Frozen Blueberries
Cook in microwave for 5 minutes.
Workout #2
When Brent got home from work, I went to Body Attack and then did half of this workout I created earlier. I was sweating after just one round!
I have been loving watching the Olympic sprint competitions and wanted to see how fast I can push myself. Watching them has definitely been motivating to get my training in!

Dinner came after another fun park trip!

These two would swing ALL day if I would let them. I don’t mind taking them to the park everyday. It gets a little energy out for them and their excitement for the park makes me smile.
Dinner:
Dinner came together pretty quick.
Roasted yellow squash, simple spinach salad and some grilled chicken covered in Walden Farm Honey Dijon Dressing.

I am loving all the fresh veggies, I have collected from friends gardens… I really may start my own next year but I’m afraid plants come to my house to die.
Now, I’m just relaxing on the couch with a little Olympic Gymnastics. I should probably go to bed just in case someone wakes up again.. (he usually sleeps great, but lately I think he has just been dreaming blue clues.. or maybe cause it’s the only time of the day we have to actually watch TV?)

Tabata Climb


Last night was amazing!! We headed to Capitol theater with Brents side of the family for an 8 pm curtain call to see Wicked! Brents dad bought us these tickets last year. I have been anticipating this night ever since! Wicked has always been a musical I have been wanting to go to since I was in high school!

It was such a fun musical! It was our first time seeing Wicked and we both really enjoyed it. I really was a fan of Gaaalinda!
Workout:
This morning, after a late night I slept as much as possible before getting up to teach Body Pump.
After class I tackled the GPP workout and completed this Sprint workout.

I used my gym boss interval timer for the tabatas. It is a FREE APP!
This is the same one I did yesterday. If you are wanting to absolutely drip “liquid awesome” This is a great workout for you.
I did 100 timed sit-ups before stretching. Phew. I really started to slow down after about 60. I would like to sub 2 100 sit-ups again. I will have to try again when I’m not exhausted…

After every run/workout I am going to be spending a little extra time stretching and rolling.

So today I spent a good 15 minutes stretching and rolling afterwards. I have a foam roller at home but the chances of me taking time once I get home is little to none, especially with the twinners who also like to roll at the same time as mommy. My IT bands are tiiiiiiiiight, I can feel huge knots on each side.. eek. Stretching and rolling is so important to your training to help prevent injury and that is something I need to be better at. I am done with injuries this year, so you know I’m going to do all I can to prevent anymore!
I made a quick trip home to get some protein in my system. Before heading to the zoo for the day!

In the mix:
  • 1 C. Unsweetened silk almond milk vanilla
  • 5 frozen strawberries
  • 1 tbs. Chia seeds
  • 2 handfuls of spinach
  • 1 scoop elite egg smooth vanilla
  • 4 ice cubes
I hope your all having a great weekend so far! I can’t believe it is already August!! Summer is almost over! I have to spend some more time in the sun while I can!

Olympic Sprint Motivation


Last night I skipped out on blogging to spend a little extra time hanging with Brent while cheering on team USA gymnastics. Go GABBY!!
I don’t know gabby personally but I was on the edge of my seat and holding my breathe, crossing my fingers and all nervous like while they were tallying up the final scores.

Yesterday recap:
Yesterdays workout left me with some dirty knees. ---> Lunges are a girls best friend and Manimals are just as “fun.”

After the workout I took the twins to play at the park until naptime. I am telling you, these two never get tired of the park and it’s the first thing they want to do every morning! While I was there I decided to make up a fun little park workout! I can’t wait to share it with you guys. There are lunges, box jumps, pull ups, pushups and sprints. I’ll get it up ASAP so you can take your kids to the park and get a little workout in at the same time!

I headed to GPP to tackle the WOD. It was all core today and I was glad because my shoulders are pretty useless today after yesterday and Wednesdays workouts.My couldn’t do the back extensions weighted for 60 seconds… let alone the RX weight.  I did not even come close to RXing that beast.  Something to work for I suppose. Afterwards, I had a little extra time so I went to the gym for a few tabata sprints. I jumped on the treadmill and the 400 m sprint Olympic competition was on.

Talk about motivation! I used my gym boss app (Its FREE) for tabata sprints. I set the incline to 1.5 and set the speed to 11!! In 20 minutes I was dripping!! I watched the Olympic sprinters legs and tried to just keep up with them. So Sweaty!

Why Hello, abs, arms and legs!
We had a play date set after at the splash park with my SIL’s
I headed home for a quick shake.

In the mix:
  • 1 C. Almond Milk unsweetened Vanilla
  • 1/2 Banana
  • Frozen Berries
  • 1 scoop Fit Mixer chocolate
  • Ice
  • 1 tbs Chia Seeds
Then it was time for some fun!

They both fell asleep before we got home, and we literally live 3 minutes away. They were tired nuggets. Hoping that nap goes for a little longer today. I’m hoping to get some chores done before they wake up!

I made some ground turkey and threw it on a bed of lettuce with some green and yellow peppers, sweet potato and drizzled it with Walden farm honey mustard dressing!

My FIL bought us these tickets MONTHS ago and I have been so excited to see it! I have only been to a handful of Broadway plays, my favorite is Momma mia. I am a huge fan of Broadway musicals! I may or may not have a few in my running playlist.. Here I go again!

Salmon Veggie Penne Alfredo

Janetha and I both tackled the workout first thing this morning! Here we are post workout. Very sweaty…. super sweaty.. it takes true blogger love to stick together for 2.2 seconds to take a picture. Okay not really… Bloggers take pictures regardless of the smelly, dirty, or sweaty, situation. Right?!

Here is a few of the besties post their workout. I pretty much lived in my sweat today. Yep.
I love this workout so much that it sounded more appealing to do again rather then running for 30 minutes tonight so I went back later and did it one more time.. Phew! Those rough boy squats were a bit tougher and uglier that 2nd round. 7 minutes of pure “heaven.”
LUNCH:
My twins LOVE noodles, and they pick around their vegetables. Today I combined them and they ate the entire bowl! It was pretty amazing!
Salmon Veggie Penne Alfredo
serves 4

Are you ready for this?
Here is a healthy alternative for a classic comfort food.
Ingredients:
1 pkg Brown rice penne pasta

For sauce:1 tablespoon smart balance butter
1/2 tbs minced garlic
1/4 tsp. xanthan gum
Pinch of ground nutmeg
3/4 cup organic low-sodium chicken broth
3/4 cup freshly grated parmesan cheese
1 container of chobani plain Greek yogurt
Salt and freshly ground black pepper to taste
Veggies/Meat: You can use any combination of veggies you have on hand. I had some left over salmon in the fridge so I used that but chicken or even canned tuna would work as well.
  • 1/2 purple onion diced
  • 1/2 C. mushrooms sliced
  • 1/2 red pepper, yellow pepper and orange pepper
  • 5 Asparagus spears diced
  • Cherry tomatoes
  • 12 oz. Salmon
Directions:

Prepare pasta by cooking according to package directions.
While pasta cooks, melt butter in a large nonstick sauté pan over medium heat. Add garlic and cook two minutes.
Combine xanthan gum and nutmeg in a small bowl; whisk in chicken broth until smooth. Pour into sauté pan, raise the heat, until sauce is at a simmer, whisking occasionally.
Add 1/2 cup of the cheese and whisk until melted. Remove pan from heat.
Whisk in yogurt until smooth. Remove from heat
In separate pan sauté veggies- I went with purple onion, asparagus, green, red and yellow peppers (Leave tomatoes out to top it off at the end.)
Heat up/cook your salmon.
Toss fettuccine with sauce then mix in veggies and salmon and top with cherry tomatoes. Season with salt and pepper to taste.

This dish is very filling. It has all and everything you need high protein, carb, healthy fats to get you through your afternoon. I love stuffing as many veggies as possible into my pastas!
