Two days time

Hey guys! Sorry for the Hiatus on the blog! It has been a crazy past two days and at the end of the day I chose sleep over the blog.
I promise I love you all just as much. Sleep even trumped showering… (Just kidding, kind of.)
Here is a quick recap of the past two days!

Day 3 of 2-a-days started at 6 am with a fun hike/run up my favorite trail in Bountiful. I think I could run this everyday and never get sick of it. Not to mention if all these peeps do it with me! When we started it was still pretty dark outside, bonus was we got to watch the sunrise.
Breakfast has been the same thing the past few days. Exciting I know.

Egg whites with a veggie and fruit pre-workout- (I can’t really workout with a full stomach, so I make sure to wake up early enough to let this digest a bit before the workout.)

Post workout has been a protein shake to help with a quick recovery. Some days these meals have been swapped, depending on the time I workout.

Even T likes his daily dose of protein powder.

Along with 2 a-days, we are following a structured meal plan as well so needless to say, my lunch has been the same salad all week with a few different veggies in the mix.

So far I have been doing perfect on the diet and the workouts. I only have 2 left! This week has been challenging and hard but at the same time it has been SO much fun. The power of community is addicting and motivating. It has been a great experience! Even the ladders that we did last night..

I even got to keep up with a cowboy and princess. These two got game for sure.

Readers Request:
I recently received a readers request for a lunge workout, ----> Ask and you shall receive! This can be done while holding weights if you would like. If you are new to working out I would cut the reps in half and just use your body weight.

Just like that, those legs and booty will be burnin’!

Last night we celebrated my little brothers birthday with the family. His actual Birthday is TODAY!

He just found out yesterday that he broke his foot sometime last week and has been playing football with it all week! Now its in a cast and he uses crutches! He is a fast healer.. we hope!
He sure is a great uncle to these two!

Tomorrow morning is the last workout of RX + week at GPP and it will be a two hour event in which I have to follow up with body pump! What a Saturday!

Sunday Enchiladas

This weekend was perfect! The weather was beautiful and all the leaves turned RED and yellow. I love Utah falls. (When they happen Winking smile)
Yesterday, we were able to have a little family time! We got a lot of house stuff done and got to celebrate our cousins first birthday! She turned one and had her birthday on a little farm. We got to see goats and ride horses!
It was B & T’s first time on a horse!

They were a little nervous at first but calmed down and I think they really liked it! I wish I could take them on rides more often! Do you think Brent would be okay if I asked for a horse this year for Christmas?

Thanks to my cousin Ben for trolling us around!
I used to have a horse growing up. And chickens, pigs and even ducks! My horse was named leah. Riding “stormy” yesterday reminded me of my childhood.. I love horses and miss the “farm life”.
Today we headed up to my parents to celebrate my sister, Heather.

She turned 23 on Friday! She is one of the sweetest most caring person I know! She is always so concerned about others and will do almost anything for anyone. I admire her for that!

My step-mom made both cakes! A red-velvet with cream cheese frosting and a lemon chiffon cake. Both were melt in your mouth fantastic.

HAPPY BIRTHDAY SISTA!
For dinner, Brent has been asking me to make enchiladas! I haven’t made enchiladas for a long time!! So I have been putting it off for awhile and finally got around to browsing some different enchilada recipes and I couldn’t find one that either 1. I was missing 1 or more of the ingredients or 2. It didn’t have all the ingredients I wanted to use. SOOO… I decided to just make them myself. I gathered some ingredients and this is what I came up with.
CHICKEN ENCHILADAS

Serves: 3
Prep time 30 minutes
Cook time: 20 minutes

Ingredients:
  • 2 Chicken Breast
  • 3 tortillas (GF or whole wheat)
  • 1 can of tomato sauce 8oz
  • 1 can black beans (I only used about half)
  • 1 packet of enchilada sauce (Or you can buy canned enchilada sauce)
  • 1 T Olive Oil
  • 1 small onion
  • 2 tbs minced garlic
  • 2 laughing cow swiss cheese wedges
  • 1 container of plain greek yogurt
  • 1 tomato
  • 1 T Chopped Parsley
  • 1/2 C. daiya mozzarella cheese
  • 1/2 C. daiya chedder cheese
  • 1/4 tsp Cumin
  • 1/2 tsp chili powder
  • 1/2 tsp of basil
Directions:
Pre-heat oven to 400 degrees
1 T Olive oil and saute onion and garlic until onion is soft

Shred Chicken
Prepare enchilada sauce as directed. (Mine was 1 packet, 1 1/2 C. water + tomato sauce)

Add Chicken, Cheese Wedges, black beans, yogurt, diced tomato, Cumin, Chili Powder, Basil.

Mix well and let simmer for about 5 minutes

Pour some enchilada sauce in the bottom of your 8x8 pan

Fill each tortilla with Chicken mixture

Fold them and place fold down into glass pan

Pour remaining sauce on top and sprinkle cheese, a few diced tomatoes and parsley over the top of the enchiladas.

Bake for 25 minutes

Brent loves me even more now. They beat out any restaurant enchilada—or maybe I’m biast. –>since I’m not really a mexican food fan.

I was surprised how easily it all came together and they tasted fantastic! I will definitely be making these again!

Honestly, Neither. I not a fan of beans, I think they are furry and Pasta is slimy weird and I’m picky about pizza ---> I know I’m crazy..

I wish I had a big backyard with a barn for some chickens and a few horses. I’m a total country girl at heart!

dessert X2

Anything twice is nice right?! Tonight we headed up to my parents house to celebrate this little dude!


Most of the family came up to celebrate and give one last hurrah before school starts! We love hanging out in my parents backyard. It is right against a mountain so we often see deer, wolves, squirrels and even turkeys stroll through from time to time.



The babies had a fun time walking around with great grandpa! and even getting some kisses from aspen.


We had red velvet and chocolate cupcakes with cream cheese frosting, topped with a fresh raspberry.


There was also home made cinnamon rolls!


I decided to go for a cinnamon roll.. but just the center because that is the best part! Can anyone really resist such goodness??  Just give me the heart and soul of the roll mmmk?


& no I don't think we got good picture out of the 100.. but siblings.. gotta love'em.


 I have a long training day planned tomorrow. Starting with a swim+bike at 5am..
