Simple Salmon


Happy Thursday! Today has been a great day! Minus dealing with a minor flood up in our master bedroom.. oomph. Sad to say we spent the majority of the day pulling up carpet, collecting fans and figuring out where it came from… bright side? The kids have their own personal splash pad. AND we have actually been wanting to get new carpet anyway so I’m kind of okay with it. Just bummed it had to happen that way.

For dinner I made a easy and quick salmon dinner! Salmon is probably my favorite fish from the sea. Salmon is power packed with disease fighting vitamins, acids and minerals.The health benefits of eating salmon actually speeds up your metabolism. Which affects your sugar absorption rate and can lower your blood sugar level. Not to mention is packed with protein and heart healthy Omega-3.
I through this together as I went and it turned out to be pretty tasty. You can’t beat a recipe that only requires  4 ingredients!
LEMON PEPPER SIMPLE SALMON

Ingredients:
  • Wild Salmon filet
  • 1/3 C. Lemon juice
  • Mrs. Dash – Lemon Pepper
  • 1 tsp Crushed Garlic
Directions:
  1. Pre-heat oven 375 degrees.
  2. Place filet in glass oven safe dish
  3. Pour Lemon Juice over the top
  4. Spread Garlic over the top
  5. Sprinkle with Lemon Pepper
  6. Bake for 30-35 min.
Enjoy!

I eat salmon probably once or twice a week, depending whether or not I can find it on sale or snag some from my fishing Uncles. Winking smile
I do prefer it to be grilled but Brent was gone (AKA the grill master). It still turned out fantastic being baked though.

Salmon Veggie Penne Alfredo

Today was GPP Birthday! We had a party all day long, with giveaways and free food to fuel and recover with pre and post this sweat fest!

Janetha and I both tackled the workout first thing this morning! Here we are post workout. Very sweaty…. super sweaty.. it takes true blogger love to stick together for 2.2 seconds to take a picture. Okay not really… Bloggers take pictures regardless of the smelly, dirty, or sweaty, situation. Right?!

Here is a few of the besties post their workout. I pretty much lived in my sweat today. Yep.
I love this workout so much that it sounded more appealing to do again rather then running for 30 minutes tonight so I went back later and did it one more time.. Phew! Those rough boy squats were a bit tougher and uglier that 2nd round. 7 minutes of pure “heaven.”
LUNCH:
My twins LOVE noodles, and they pick around their vegetables. Today I combined them and they ate the entire bowl! It was pretty amazing!
Salmon Veggie Penne Alfredo
serves 4

Are you ready for this?
Here is a healthy alternative for a classic comfort food.
Ingredients:
1 pkg Brown rice penne pasta

For sauce:1 tablespoon smart balance butter
1/2 tbs minced garlic
1/4 tsp. xanthan gum
Pinch of ground nutmeg
3/4 cup organic low-sodium chicken broth
3/4 cup freshly grated parmesan cheese
1 container of chobani plain Greek yogurt
Salt and freshly ground black pepper to taste
Veggies/Meat: You can use any combination of veggies you have on hand. I had some left over salmon in the fridge so I used that but chicken or even canned tuna would work as well.
  • 1/2 purple onion diced
  • 1/2 C. mushrooms sliced
  • 1/2 red pepper, yellow pepper and orange pepper
  • 5 Asparagus spears diced
  • Cherry tomatoes
  • 12 oz. Salmon
Directions:

Prepare pasta by cooking according to package directions.
While pasta cooks, melt butter in a large nonstick sauté pan over medium heat. Add garlic and cook two minutes.
Combine xanthan gum and nutmeg in a small bowl; whisk in chicken broth until smooth. Pour into sauté pan, raise the heat, until sauce is at a simmer, whisking occasionally.
Add 1/2 cup of the cheese and whisk until melted. Remove pan from heat.
Whisk in yogurt until smooth. Remove from heat
In separate pan sauté veggies- I went with purple onion, asparagus, green, red and yellow peppers (Leave tomatoes out to top it off at the end.)
Heat up/cook your salmon.
Toss fettuccine with sauce then mix in veggies and salmon and top with cherry tomatoes. Season with salt and pepper to taste.

This dish is very filling. It has all and everything you need high protein, carb, healthy fats to get you through your afternoon. I love stuffing as many veggies as possible into my pastas!

Labor Day

Happy Labor day!! I hope you all had a relaxing labor free day!

First off I have a confession...

I wear white after labor day..

phew.. glad I got that off my chest!

We started off the day with some egg scrambles and then it was off to the gym!

Workout

Brent and I both woke up early today to get our workouts in.
I completed a this super set workout along with a Body Combat class--which I haven't gone to in awhile.

Dinner

Last nights dinner can not go unmentioned..
I chopped up lots of veggies!
Sweet potatoes..

Zucchini...

And yellow squash...

Saute'd them in 2 tbs of olive oil. I added the sweet potatoes first and let them cook a little longer before adding the squash and zucchini.

For about 15 minutes. --Stir frequently!

I also chopped up some sweet potato fries for future meals! (one of my making healthy easy tips!)

I tossed a simple romaine lettuce salad with purple onion, cucumber and tomato drizzled with balsamic vinaigrette.

The steaming hot veggies--Done!! -- The steam kept fogging up my camera lens!


We grilled some salmon in tinfoil for 20 minutes and topped it off with some peach-kiwi salsa!! It added the perfect sweetness to the Alaskan Salmon! 

And to top of the meal with grilled corn on the cob! Can you believe this is the first cob I've had ALL summer! Yes.. I realize I have some major making up to do! It was SO good!! 


I baked the sweet potato fries and put them in a airtight container and popped it in the fridge for future meals! After I snagged one or two ;)

After a long day of running errands with the fam we are tired and I'm pretty sure its time to settle down for the night and watch some Bachelor Pad!--No worries, Brent is just as addicted to it as I am! Ha! Reality TV at its finest.

meet mom & dad #2

After tackling my mile long to-do list.. which is still about that long... sigh* Do any of you start something but kind of half finish it? Yep, thats me... I feel like a have a pile here, a pile there... etc. For example, here is few things that I got done or almost done on my list!


  • Laundry- Washed.. took upstairs. I have yet to fold and put away..
  • Clean Bathrooms- Mirrors check, counters, check. Toilets......
  • Vacuum 
  • Mop/sweep kitchen- did it. Then T&B spilled syrup that I had hiding in the pantry from our Christmas party.. Now my floor is sticky and so were they.. Put I got to cross off dishes.. 

  • Teach Pump
  • Dishes- see...
  • Find Maxi dress- FAIL, 3 stores and nada... 
  • Pack- ha. 
  • Create posts for next week Pictures taken. Now to type. +1 more recipe to create! 
  • Find Subs- 2 no's and about 10 no response. #expected. 
  • Pick up Invites and address for twinners birthday- Never made it.. must get in mail before we leave! 


AND this is only the first half..  I have to work in the morning, so as soon as I leave I best be getting to it.

After Pump tonight! Which was a great class! (Hi Cindy!!) It flew by quickly.. it was a smaller class today full of a few regulars so we were able to chat about non-pump things in between tracks.. such as the casey anthony case (crazy sauce), the fact my hair was somewhat manageable looking,  oh and of course form and technique... ;)
After class I hurried home because Mom & Dad #2 were coming over to eat some grub & learn the twinners nightly routine!

Meet the most gracious, helpful, amazing couple EVER! Matt and Jaclyn have been friends of ours since High School! Jac and I danced together in High school!  At our birthday party last week she totally jumped at the chance to tend the babes (in fact she offered!) & I honestly feel 100% comfortable leaving T & B with them! They both love them and aren't hesitate at all! Which is amazing since B has become a bit more clingy to mommy lately. I prepared a feast, okay, not really just the usual dinner around these parts.

I'm off to write up a few blog post to share while I'm gone AND also I have some AMAZING guest post for you all to keep you entertained and hopefully I'll be able to pop in a few times while we are in Kaui! (rumor has it there may be free wi-fi!)
