Workout: 30 min. swim, GPP, Body Attack
This weekend went by fast… to fast. Back to the grind. But at least it went out with a bang. And this week is off to a great start!
It’s tradition in my family to have crepes on conference weekend, Even when I lived at home we did this and its something I want to carry on with my family. Although, I’m still sticking to whole 30 I wasn’t going to let that break tradition! I invited my BIL & SIL over to join us for our little brunch.
This recipe fit the criteria of “paleo friendly” so I got to work.

SUNDAY CREPES
Ingredients:
- 4 whole eggs
- 3 egg white
- 1 C. Almond Milk
- 4 T. Coconut Flour
- 2 tsp. Vanilla extract
Directions:
- Put all ingredients into blender.
- Blend on medium until well combined
- Heat skillet to medium-hot and spray with olive oil
- Pour batter onto skillet
- As soon as you pour it, pick up the skillet and roll the batter around until thin
- Let cook for about a minute
- No need to flip the crepe!
I collected a variety of toppings for the crepes- pan roasted veggies, strawberries, bananas, vanilla Greek yogurt. white chocolate cream cheese, mini chocolate chips, powdered sugar and maple syrup.
Obviously, some toppings I couldn’t have but I didn’t feel restricted at all and was able to get my sweet & savory craving in.
I filled one crepe with the veggies with added avocado and topped with tomatoes (should have had some salsa..).
Then filled the other with strawberries and bananas and I ended up throwing some strawberries into the blender on high to make a “strawberry syrup”. No added sugar, just plain strawberries and it was delicious!

Brent and I have decided to add to our family…
Nope, no baby. Sorry.
We want a dog.
Again.
I know it seems a little crazy, but both Brent and I love dogs and we miss having a pup. We used to have a couple poms that we absolutely LOVED but after our Sadie died, and we had to get give our other one up because she wasn’t very well behaved once the babies were born.
I have been looking into different breeds for awhile,
I’m going to be pretty picky about it. Its got some big paws to fill.
Sadie was the best dog in the world…
We created a list of requirements and have narrowed it down to two breeds:
- Vizsla
OR a
Weimaraner
Qualifications:
- Can handle long runs with me
- Hikes, hunting, and biking with Brent
- Be able to tolerate two 20 month olds
- Eager to learn
- Gets along with other dogs.
- Low maintenance (I don’t want to have to bathe her every week..)
- No shedding
- Medium size
- Female
- Friendly, active, and gentle.
- Spayed, up to date on shots.
- Potty trained
- Purebred
We are on the search. We are looking for a young dog but not a puppy. We are up to adopting/rescuing one. Let me know if you have any other recommendations that fit our criteria and if you have any connections!

AW, yay and congrats on the new addition to the family! We got a puppy after the new year and it's been a blast :D He's tiny, a toy poodle, but we have a 1 BR apartment and no fenced in back yard so our wishes for a lab were put on hold... One of my girlfriends really likes Vizslas and is planning to get one soon!
ReplyDeleteHey - we have a vizsla and love him! He's great- very active energetic and can hang with me on every run. But they are extremely energetic which sometimes is hard- as long as they get attention and excercise they are great!

I love puppies :) Both of those breeds are great- however having been around/ babysitting both dogs (A previous boss had one of each- which then had puppies that were AMAZING) I suggest the Vizsla.. They are a bit smaller and not as crazy. Their temperaments are much more gentle and sweet- especially with the kiddos.. Happy puppy hunt!
ReplyDeleteHey Candice! So I saw your blog on the ward fitness facebook page and I thought I'd check it out. Very cool. I had to comment on the dog thing because we had this exact decision to make and eventually decided on a Vizsla. Weims tend to be bigger and all the ones we came in contact with were a bit crazy (though our dog is pretty crazy too). We've had our dog for almost 3 years and got her when she was 10 weeks. She is about 45 pounds and LOVES to run. I mean, that might be an understatement. If I take her for a run I try to find places she can run off leash and she just runs laps around me the whole time. I read in Runner's World that Vizsla's and greyhounds are the only 2 dogs that its safe to train for a marathon with. And I believe it. With that love for running, though, comes a lot of energy. We got Nell when Mason was about 18 months and its like having a newborn all over again. Only a crazy newborn. She was definitively a "hyper" puppy with an endless amount of energy. (They stay "puppies"-behavior wise- for 3 years). With that said, she has calmed down a lot and is so good with the kids. I just made sure to get her out for a walk everyday and let her run off leash. If you run with her daily it will help things a lot. Also, Vizsla's are known to be snugglers and our dog find herself on our lap whenever we sit down. She thinks she is a tiny dog and loves to curl up on top of us. Anyway, I guess I should have just said to call me if you have questions because we did extensive research on both breeds. I also know that there are a few Vizsla rescue places out there. I follow a group on facebook that advertises them. Vizsla's are hard to come by though (even puppies), but its not impossible. Anyway, there you have it. Though I love my dog, so I might be biased.

Honestly, I don't know if I've ever had a crepe. I think I have, and it had fruit in it. Pretty tasty if I say so myself.

ReplyDeleteI contemplated getting a viszla, but was not aware of how energetic they were (I, too wanted a running dog...) until I spoke with a breeder.

She is a Nova Scotian Duck Troller. You need to look them up! They are SO quiet, and I would assume very good for runs. My dog, being that she is older, overweight and a rescue doesn't run much, but we did manage to take her on a 3 hour hike and she survived :-)
