something sweet sunday.






Hi friends! Hope your having a great Sunday so far! I woke up this morning with nothing but dessert on my mind.. dessert for breakfast yet again. Not ice cream, or cake... more like a giant muffin, inspired from debs fudge protein muffins 

Microwave Muffin Love

Ingredients:
  • 2 Egg whites 
  • 1 whole egg
  • 1/4 cup pumpkin 
  • 2 T coconut flour
  • 1/2 tsp baking powder
  • 1 T. Agave Nectar
  • 1/2 C. Blueberries.

Directions:

Mix all ingredients together in microwave safe bowl
Fold in blueberries



Pop it in the Microwave for 2:30-3 minutes. Eat it straight from the bowl or pop your muffin onto a plate.




 Piece of cake! er... muffin ;)

fish sticks and fries.

Have you ever been to Artic Circle? They use "real fish" for their fish sticks.. ya.. I'm sure.
and they use real grease and grime to.

Maybe they are good? Pretty, sure mine are better.. and about 7,342,889 times healthier.. ya. I'm sure.

..Fish Sticks..


  • 2 egg whites
  • 1 cup almond meal
  • 1 cup sesame seeds
  • 5-6 Cuts of Tilapia 


Pre-heat oven 350 degrees

Place each ingredient in a separate bowl.


Dip each cut of Tilapia in each bowl.. in this order.. Egg whites--> Almond Meal --> Sesame seeds.
don't mind my white and pasty arm.. I promise to get some sun soon. 


Place in glass pan, or even better on on a cookie sheet with that grate looking thing..(yes, I know.. I'm a great chef that I refer to it as the "grate"... )  But I don't own one. So what you see is what you get ;)

It worked well. At least it wasn't in a bucket of 893,783 day old grease. Just sayin.

Bake for about 25-30 minutes until fish is baked throughly Then turn on the broiler on high for about 5-7 minutes till lightly brown. 
Serve.

not bisquick

Growing up my mom made breakfast every morning. It was either, cereal, eggo's, or bisquick pancakes.
My favorite was of course those big, white and fluffy pancakes, topped with that syrup in the shape of the old lady. Huh? Ya, I know.. I also grew up with candy corn and peeps as a staple. You would never guess.
Well, Yesterday being mothers day, I woke up and thought about my mom and "her" pancakes. Big and fluffy was my main goal. Since, I don't even know where to find bisquick at the grocery store... really.. no clue. And my mom is not around to just "add water" to the mix so I made do.

Coconut-quick Pancakes

Ingredients.

  • 4 TB coconut flour- I used Bob's Red Mill
  • 6 TB Almond Breeze vanilla unsweetened milk 
  • 1whole  egg
  • 2 egg whites
  • 1/2 tsp of vanilla extract
  • 1/2 tsp baking powder
  • pinch of baking soda
  • pinch of  salt
  • lemon- cut in half and squeeze a little juice in. 
  • 1 TB Agave Nectar
Directions

  1. Heat pan/skillet low/med. heat. 
  2. Mix all ingredients together in bowl. 
  3. Spray Pan/skillet 
  4. Pour mixture
  5. Browns quickly, its okay. its not bisquick-more like brownquick. 
  6. When bubbles flip and cook other side. 
  7. Make a stack
  8. Cover with pure maple syrup.. Couldn't find the old lady syrup either....
  9. Dump some blueberries on top. 
Healthy, Low Calorie, Carb, sugar etc. Not to mention big, white and fluffy.


Mom, I miss you and think of you everyday. I know your watching over and protecting my family. You are our angel.  I wish you were here to talk to, play with and hold your grandbabies and of course make me pancakes. For now, I'll just make do.

cinco on seis de mayo..





Sorry for the blog hiatis the past couple days, but hey, it happens. Yesterday, we celebrated
  Cinco de mayo in full fashion. Sticking with my Food Challenge of just eating whole, fresh foods.. this meal came to be quite the challenge.. SO I actually prepared as much as I could fresh but had to cave to please the needs of my guests.AND of course the holiday;) I did however stick with the challenge and I only ate what was fresh, whole foods.

BEANS..
Spanish rice--mmmm.. not to much of a rice fan either 


I made fresh guac. using this recipe! This was so easy to make.. kind of like a 7 layer dip with 6 ingredient and the layers actually just make the flag. Simple and self explanatory, I spread refried beans across the dish and made my best flag, using guac, sour cream, and salsa! 

Spanish Rice

  • 1/4 C. Olive Oil
  • 1/2 onion finely chopped
  • 1 garlic clove, minced
  • 2 cups brown rice
  • 3 cups of chicken broth low-sodium
  • 1 large scoop of tomato sauce/paste
  • 1 C. Diced Tomatoes
  • Pinch of Oregano
  • 1 t Salt


In a large Skillet, Brown the brown rice in Olive Oil. Add onion and garlic, stir frequently. Meanwhile, bring chicken broth to a boil in separate sauce pan

Add the rice to the broth and bring to a simmer, cover and lower heat and cook for 15-20 minutes, Take off heat, leave lid on and let it sit for about 5 minutes. 



Add a little cilantro. Mix and Serve!

Dirty Sox

Dirty Sox happens to be the name of our softball team! Brent and I started playing softball. We play on monday nights throughout the summer!! Last night was our first game, and guess what?! WE WON!! Neither of us have EVER played in our life.. (who really let us on this team?) We actually didn't do to shabby, we really surprised ourselves!  I can hit & sprint but still need to work on this whole catching business. Softballs are anything BUT soft. Brent played pitcher.. and I played catcher. How sweet...

Big Thanks to GPA and GMA for watching the twinners!! Hopefully, they will get to come to the next game! Its still a tid bit chilly here.

Anyway to squeeze in a little more exercise in my day... ha! I loved it and can't wait to keep playing! Especially because Brent is playing to! 

MANGO SALSA CROCKPOT CHICKEN!

Sticking with my new goal.. I have discovered its a little tougher then I anticipated.. Because salsa is more conveinent to just buy then to make.. but a goal is a goal so I just made  this salsa(which really is stellar!) This time I used 2 extra tomatoes, no avocado but added sliced mango! Inspired by Julies easy salsa chicken! 

2 Chicken Breast + Salsa + Crockpot


Set on LOW for 6 hours. 
Simply shred it, Stir it together


AND SERVE!!
In the mix.. Handful of spinach, Sprouts, Green beans and Sliced Almonds + the Chicken on top! I put a little more salsa on top post pic. For a little extra flava!

This recipe is so simple and delicious! You will love it! Would be perfect atop salad or even sandwiched between two slices of whole wheat bread with avocado, tomato, lettuce...cheese.. yum!

blueberry oat cake... for breakfast..

So I'm really getting good at this whole dessert for breakfast thing.. smoothies and now cake.. Who is really going to complain?

I awoke this morning early.. thanks T & B.. mostly B.

Blueberry Oat Cake

Preheat oven to 375

Mix together the following ingredients in a oven safe bowl/ramekin
not pictured.. vanilla whey dymatize protein



  • 1/2 C. Rolled Oats
  • 1/4 C. Almond milk
  • 1/2 mashed banana
  • 1/2 Scoop Vanilla Protein
  • 1/2 C. Blueberries
  • Capful of vanilla extract.--about 1/2 tsp?
  • 1/2 tsp Baking soda
  • Pinch of salt. 
  • optional- 1 tsp of agave (for a little additional sweetness)



Bake for 20 minutes, then broil on high for 5-7 minutes.
