cracker snacker

Hey friends!
This morning started out EARLY! I picked up another class at one of our local gyms. Its been awhile since I have taught an AM class.. Ever since one of the gyms I worked at closed.
It was a packed class! Love the energy and sweat before the sun comes up!
I then went to a bootcamp class that kicked my trash. And later I tackeld RUNIMALS. Aka.. run + manimals.
What the heck is a manimal? Check it. Wow.

For breakfast inbetween my workouts was eggs.


know your shocked. But today, I was lazy and didn't feel like washing my skillet so I just made it the microwave

Yep, you can make eggs in a microwave. They only explode a few times. But its possible.

4 egg whites
peppers + tomatoes 
Put ingredients in a bowl and cover with a paper towel and place in microwave for 1 minute. Then start the microwave again for another 1 or so until fully cooked. 
I also ate a handful or 4 of blueberries while it was cooking. 
Also  I thought about doing this. ha. It can just keep staring at me.


Tonight we had a neighborhood walk-about scheduled. To bad, Utah weather is bi-polar.
It was beautiful all day and now its a windy, stormy, rainy mess! So I'll just enjoy my treat by myself

while watching "So you think you can dance".

I love anything sweet & salty and this little treat hits the spot! If you have little kids they might just love and devour these little bites as well. Just hide the rest of the chocolate chips before they just disappear.. ;)

Usually a frozen banana dipped in Almond butter.. but the grinder at my local grocery store is broken and I'm going through withdrawals.

How to eat healthy on the w-end!

Good morning!! I started my morning off with yet another delicious shake that looks not so appetizing.. blueberries + spinach = gray shake.

And enjoyed it while chatting away with my little bf.

I wish I could just freeze time and have her stay this age forever.

In the mix

  • 1 cup almond milk unsweetened vanilla
  • 6 ice cubes
  • 1/2 c blueberries
  • 1/2 c. strawberries
  • 1 tbs almond butter
  • handful of spinach
  • 1 scoop of vanilla whey
  • pinch of gaur gum


As you can tell from my weekend it was a little party weekend and some of you can probably relate to the craziness that comes with a weekend. So I thought I would share some tips on maintaining a clean diet through the festivities!

How to eat healthy on the weekend!

I think that the weekends are the hardest to eat healthy. Due to all the parties, family gatherings, showers, late-nights, date nights. eating out etc. You know what I mean. I will admit I have let myself indulge a little more on the weekends which usually leads to a sluggish Monday. Its a little harder to get going, to get motivated and get things done.

I don't really feel guilty about it, because by indulging, I really don't eat as much sugar, cookies or a whole pan of cake but I eat just more food then normal along with a cookie.. or two:)

I noticed that my performance at the gym had a little less oomph.. and I don't love that dreaded monday slug feeling. I decided to think of a few ways to help me avoid that.

Plan your weekend- Since food is pretty much the center of all activity on the weekend you need to make sure you take a look at your schedule and plan ahead. Which party, or out to eat do you know there will be oppurtunities to indulge.

Pack a healthy treat- Just in case you get to a party and there is limited healthy food at the party. It probably is a little awkward to pull out your apple while everyone is munching on treats so just keep it in your purse and eat it after the party on your way home.

Socialize- Engage in conversation, take pictures, and carry your drink. By keeping your hands and mouth busy it will leave less time to travel back to the food spread or snack on the remaining appetizer.


Eat Breakfast- Just like any other day breakfast is vital to start off a healthy weekend. Make sure it is a fully balanced meal that includes, protein, healthy fats fruits/veggies.


Workout- Rather it be at the gym or a swim, hike, run etc. I like to try different kinds of fitness on the weekends. Especially in the summer, we like to go water skiing, swimming, or hiking!  Make time and get a little workout in.

blueberries and spinach always look gross but taste fantastic!

After teaching there almost always will be a trip to the pool, lake or the mountains :)

late night bloggin..

Hey everyone! Hope you had a great weekend!! Ours was busy as usual! Now that the babies are busier, I'm blaming my poor blogging skills on that. Thanks for understanding! Our schedules have been a bit on the cahrazy side lately. Hopefully they jump back quick. T & B have been little troopers though!
This weekends highlights:


  • Date night to Les Mis- I have a secret love for broadway plays. In fact we already have tickets for wicked and it doesn't release until next summer!! 

all fancied up! 



  • Body Pump/Dirty dash.. duty called, so I taught class instead of participating in the race.. but it sure looks like my friends had fun! (if there is a dirty dash race in your area YOU need to sign up!) Life changing. really. Although so is Body pump. In fact, this class was epic and I am still sore! 




  • First BBQ with friends and the babies first dum-dum

yum! we love sugar!!! 



  • T had his 3rd tooth break through! ... ROUGH. no pic.. its one of his top teeth and he just does not hold still for mom to get a good shot. B hasn't had even one yet.. I will have to do a tips for teethers post.. (would you like that?) although this is my first round with it.. so I'll tell you my secrets if you tell me yours. 



  • Twins first time at the zoo! I'm pretty sure they made good friends with the monkeys..

  • Great G-pas birthday party


So not a lot of food creating this weekend.. I did however make something I haven't had in a loooong time!


A berry shake! 

In the mix:


  • 1 cup almond milk
  • handful of frozen blueberries
  • handful of frozen strawberries
  • 1/2 frozen banana
  • 1 scoop of vanilla protein powder
  • 6 ice cubes 

You can never go wrong with one of these cups of deliciousness for breakfast, post-workout or even dessert!

It was a great weekend and even looking forward to the week to come! Due to the fact we have a little vaca at the end :)

Q. Any teething questions? advice? etc. I will include any and all tips in my "tips for teethers" post! I work in a pediatric dental office so any ?'s about baby teeth are welcome.

Q. Whats your favorite animal at the zoo?
I love the little monkeys and would take one home if I didn't already have two. :)

Cupcakes please.

Some days cupcakes are mandatory.



Today was one of those days.

No flour, No sugar? You bet.

How about the frosting? nope. powder sugar free. 




How is that possible?


Let me show you the ways. 


In the batter-



  • 3 egg whites
  • 3 whole eggs
  • 1/2 cup of coconut flour
  • 1/2 cup grapeseed oil
  • 1/2 cup raw agave nectar
  • 1 tbs vanilla extract
  • 1 tsp sea salt
  • 1/4 tsp baking soda


Directions:
Preheat oven to 350 degrees F.
Combine coconut flour, sea salt and baking soda in a large bowl. Stir to mix.
Combine eggs, grapeseed oil, agave and vanilla in a medium bowl. Stir to mix.

Pour wet ingredients into dry ingredients in large bowl. Use a hand mixer to make a smooth yellow cupcake batter.

Pour batter into oiled cupcake pan, or be smart and use the cupcake liners.. (I was out)

Bake for 10 minutes if using small cupcake pan, 20 if large.

Start prep for frosting, while they are baking.







Powder sugar free FROSTING

You will need:

  • 1 cup dark chocolate chips (darker the better)
  • ½ cup grapeseed oil
  • 1/4 tsp xanthan gum
  • 2 tablespoons agave nectar
  • 1 tablespoon vanilla extract
  • pinch celtic sea salt
Directions:
In a medium sauce pan, mix all ingredients together and stir constantly (except xanthan gum!)

Transfer to a bowl and place in freezer for 10 minutes to cool and thicken.

Hold on to that spoon

Pour chocolate into food processor or blender and whip. (add xanthan gum if needed)


Frost your cupcakes!

Baby cupcakes make me smile.

Tuna Patty

First off, We need to celebrate.. 3 things.
1. Its JUNE!! what?!  My twinners are going to be 1 NEXT month!!
2. HAPPY NATIONAL RUNNERS DAY!! (did you celebrate?)
3. Today is JANETHAS BIRTHDAY!!! Her blog is what inspired me to start my own. Click on over and tell her happy birthday!

Alright. Now we can get excited about lunch :)

Lunch came together quickly today! I was craving a little fish today! After a double workout I was needing to get some protein in my system asap!
Tuna it was!!-- I am really picky about my tuna. Because I have been eating healthy and avoid sodium ladened? canned foods, I'm really sensitive to overly salted foods. A lot of tuna, although packed in water can contain over  190mg of salt.per serving. As I was browsing around the grocery store I fell upon this.
Literally 20 mg per serving. Winner Winner Tuna dinner... 

Lets make a patty yes?
NO you don't need mayo. 

You will need:

1/2 Can of Crown prince no sodium added Tuna
1 egg white
1 tbs almond meal
sliced celery desired amount
diced purple onion desired amount

Mix all the ingredients together in a bowl 



Heat up skillet & spray with canola oil 

Form a patty


Place patty on hot skillet and let cook for about a minute before flipping & repeat! 

This would be perfect in the middle of a whole wheat bun with lettuce and tomato...

Just picture the bun. mmmmk? I didn't have any buns. So I threw it on a bed of spinach and sliced tomato! 

I also munched an apple while the patty was cooking. 
This left me full and satisfied. Love it! 

Lets chat.
 I just watched the Biggest Loser finale... ( I know. I was a little behind) and found out Anna Kournicova taking over for Jillian? Really... Not really who I expected.. What about you? Who do you think would fill the Jillian gap?

I think that Jamie Eason or someone with some kind of personal training back round might of done better.. but anna is beautiful (naturally) so the camera will love her. In all reality show...uh. reality?  


Fa Fa Farina!

Yay!! JUNE is here! Its warm outside and I am hoping it is here to stay. But this is utah so my hopes aren't too high.... I'm welcoming summer with open arms!
For breakfast I had the farina for the first time! I picked it up at Trader Joes while I was in CT in April and decided to dig in this morning!
It reminded me of the malt-o-meal I used to eat growing up!

I followed the directions on the box for one serving.
3 tbs of Farina
1 1/4 C. Water

Put in microwave for 2 minutes stirring every 30 seconds, until thickens. I forgot to stir and it volcanoed over in my microwave.. amazing. 
Add 2 tbs vanilla protein powder
Frozen blueberries/raspberries as desired (any fruit will do)
added a little agave to sweeten it up a bit. 

Get in my belly.
