Weekend Repeat

Last night, my sister in law, Charla and I went to see pitch perfect. I saw it last weekend and I’am sure I will purchase that movie when it is released!




I can’t get enough.


LOVE this show. If your into chick flicks, comedy, singing and dancing this show is right up your alley. Its right up there with “How to lose a guy in 10 days,” “Matilda” and “Mean Girls”.---{Don’t hate}
I believe I am the only person who did not go to a Halloween party this weekend.. But don’t worry, we have one tomorrow, Tuesday and of course Wednesday! I have yet to find a costume…
Talk about procrastinating… I am excited to get T and B all dressed up!
Today, we all slept in! {much needed} then made some omelets for breakfast!

The rest of the day was spent cooking and prepping meals because I know my week is going to be a little crazy, so I wanted to be sure to have healthy meals ready to go!
I also had to make a Sunday treat for the fam!

It can’t be fall without Pumpkin Cookies! Each one of these cookies has 50 calories! I want to make a little change to them before sharing the recipe..


Since it was almost 70 degrees today, we decided to take 2 mile walk around our neighborhood.

If your wondering why T is holding those two jeeps, its because he takes them EVERYWHERE we go.. the grocery store, shopping, gym, walking, nap, and to bed. They are never farther then 2 feet from him.
This may of also happened this weekend.

One-eyed Jack

When my husband was a kid his dad would make him one-eyed Jacks for breakfast. He grew up loving this simple and delicious breakfast. He was excited to share this meal with us. Although, we have had it several times in our home. I thought it was about time I share it with all of you!

It’s a fun and healthy meal for kids and filling enough for adults.
I LOVE eggs for breakfast! One of my favorites is drippy eggs- you know when the yolk is still a little runny. AKA sunny side up?
Brent has mastered the art of the dippy egg combined with the one-eyed Jack, so I just leave him in the kitchen to do his thing. I must say, I love when he makes breakfast for us.

He even threw a couple extra drippy eggs on there for me. And the center of his toast.  Now that’s love.
{One-eyed Jack}
Ingredients:
  • Slice of bread per person- brown rice bread, eziekiel or whole wheat
  • 1 egg per slice of bread
  • butter- (I use smart balance with omega-3)
  • *Extra eggs if you desire.
Directions:
  1. Heat a skillet
  2. Spread each slice of bread with a thin layer of butter
  3. Using the top of a cup (or sugar cookie cutter) remove the center of the bread.
  4. Place on a *HOT skillet and crack an egg into the center. *The skillet has to be hot or the egg with spread out through the bottom of the bread.
  5. After the egg turns white flip it toast the other side!

Friday we had a Halloween Party with some friends

We carved pumpkins and snacked on bulging eyes, chips and salsa, candy and cookie dough dip!

Saturday, after work, I spent most of the day up around pineview resevoir

Pacing and supporting a couple of my crazy friends.

Ogden Valley 50 miler.
From the park, runners make their way up Trappers Loop to Snowbasin ski resort and down Old Snowbasin Road. Once in Ogden Valley, the course will go west towards Pineview Dam for an 18 mile loop around the reservoir.  Then they run back up Old Snowbasin Road and down Trappers Loop into Mt. Green to finish back at the park.
Yes, 50 miles!!!
You start at 5am. You have 13 hours to finish.
I had every intention of running the whole thing with them but I opted out to sport this all day.Winking smile
