16 layers of Jell-o and My breakfast everyday.

 

Good morning! Happy Sunday!

My breakfast this WHOLE week has been a oatmeal frenzy! I’m a huge fan of oatmeal because it is SO versatile. You can throw anything in the mix and fill satisfied for the entire morning!

Eating breakfast is SO important! You should eat your breakfast within a half hour of waking up to ensure a revved metabolism that is essential to burn fat and not to mention feel energized and ready for whatever your day may bring.

To make my oatmeal, I measure a 1/2 C. Rolled oats and 3/4 C. of egg whites into a microwave safe bowl and cook for 3 minutes in the microwave.

Then I get all crazy up in here with my mix-ins.

  • Chia seeds
  • Strawberries
  • Flax seeds
  • 1 Tbs. of coconut oil
  • Stevia liquid drops
  • Protein PB2 drizzled on the top!

Carbs, Protein, Healthy fats, and omegas all in one bowl!

Perfect breakfast if you ask me!

Yesterday, started bright and early! It was launch weekend at one of the gyms I teach at. We launched combat and then I taught body pump. We had a packed house for both classes! Got to love it. I even grabbed some free yogurtland they were handing out on my way out the door!

It was also the SLC marathon yesterday! The weather was dreadful. It was raining, hailing, windy and really just not the greatest conditions that you would want to race in. I was so impressed and inspired by all those that ran it. I sold my bib about a month ago because I have a vacation next weekend and couldn’t miss work two weeks in a row.

I had several friends run the marathon, even a couple who ran Boston on Monday!

At the expo they had this banner that all the runners could sign to send to Boston.IMG_3132[1]

If you look close you can tell there is not ONE inch left on it. THAT is cool.

My friend Walker ran the entire marathon holding the American flag!

Runners do not back down! Despite the casualties in Boston, we do not let them weaken us, it made us STRONGER!

UNITED WE STAND!

Afterwards, I didn’t even have time to shower {what’s new?} before we had to be at a birthday party! My friends little girl turned ONE! So we headed to celebrate and I couldn’t get over the amazingness that is this 16 LAYER JELL-O.

You would have to be that most patient person on earth to make it. In fact, my friends mom made it and she takes care of T and B for me while I work so I KNOW she has the patience of a saint. Maybe one day, I’ll test mine through Jell-o. Probably not though. When it comes to food there is no such thing.Winking smile

The kids ate their Jell-o on the floor… It was a jammin party and I didn’t want them to drop anything on carpet so they partied there. They didn’t seem to mind.

I ate lunch when I got home..and it was weird.

Eggs, Spinach, sweet potato with avocado and a sweet potato with protein PB2 on top!

I accidently added to much liquid to my PB2and it looks more like soup then syrup but eh, whatever it still tasted good.

Later in the day, we went for a walk and bee was all ready to go with her cat hat.

Then of course we decided we needed fro-yo post walk. Mainly because I didn’t get to eat the Yogurtland earlier because it hurts my stomach, and I couldn’t get it off my mind so we headed to my favorite fro-you.

RED MANGO!

They recently came out with RASPBERRY SORBETTO and I tell you this stuff is dreamy!

It is GF, SUGAR FREE, and DAIRY FREE and only sweetened with stevia which makes it 10-15 calories an ounce. Not to mention that its packed with probiotics that make my tummy happy!

I dug right in, This stuff is creamy! I obviously couldn’t get enough because I bought a quart to take home.

I filled it a little high…”on accident.” Someone couldn’t keep her little fingers out of it either!

B and T can’t get enough of the good stuff!

It was a great way to wrap up the day!

Red Mango Giveaway

Hey guys! This post is long over due, but well worth the wait!

When I was pregnant I’m sure I had one of these everyday of my third trimester!! It got to the point I would walk in everyday and the employees working already knew what I wanted and had it ready to go! They didn’t even make me wait in line sometimes! I was pretty much a regular!

Brent even brought me Red Mango every day I was in the hospital after I delivered!

When we moved away from the Fort Union location, I was pretty bummed and our red mango trips were few and in between, but a few months ago a Red Mango opened in Bountiful!! Less then 5 minutes from my house and 2 minutes away from the gym.

Red Mango is great post workout, they even have protein they can add to your smoothie! Not to mention the kids never complain because they love Red Mango just as much as me!

We went to Red Mango after I taught Body Attack launch last week and I got the new Winter Carmel flavor and it was hands down the best thing I have ever tasted.

I didn’t get to crazy on my toppings because I really wanted to enjoy the flavor of the yogurt! I usually always stick with original flavor with raspberries and pie crust. I was happy I went out of my comfort zone and tried something new!

Look at all the different options they have in store! They just don’t have yogurt, they have fruit smoothies, artisan hot chocolate, protein shakes, parfaits, and even coffee chillers to name a few.

I’m Cheap


Yesterday, after I signed off I headed out to lunch for one of my best friends baby shower! Luann worked with me in the dental office for several years and we became great friends. She is working on getting into dental school and moved to Connecticut last year but came to visit for the week. Her SIL put this little “dental office friend” shower together for her. We met at Brio in Murray at the Mall and had a good time catching up with all the girls.
I’m kind of cheap when I eat out and Brios salads were at least $14! No, thanks. So I opted for the simple side salad and added grilled chicken for a reasonable $9. The chicken was grilled perfectly and the feta cheese was perfect. Brios Balsamic dressing was light and tangy. I just wanted to drink it.

Before our meals arrived we devoured the bread basket! The crispy flatbread was my favorite, it had flax seeds on top and were baked to perfection.

For dessert, Luann’s SIL brought each of us a cupcake, I’m not exactly sure where she found these delectable little pieces of heaven but they were so good, we all had different flavors and shared so we could sample each flavor. I picked out Cookies and cream. But my favorite was the red velvet.

For dinner we made a quick tilapia with some steamed green beans on the side.

Dinner was quickly followed by a little dessert.

Orange leaf for dinner!! At least I piled a little nutrition in my dish! Kiwi, raspberry, peaches and crushed almonds. On top of orange fro-yo.
It was delicious!
I had a gift certificate burning a hole in my wallet so we took it to go and headed to the park to get some of twins energy out before bed.

This morning I headed to the gym for Body Pump and completed this quick cardio mash at Gold's.

I was able to do all 500 rope jumps unbroken!! Phew! My calves were on fiiiiiiiiiiiiire! A new PR!
I came home and whipped out some scrambled eggs packed with veggies and topped with organic ketchup.

Throwing veggies in my eggs is an easy way for me to make sure to get my veggies in for the day!
After breakfast I headed to Ross to find some shoes for the twins because their feet just had a growth spurt. After finding a pair for each of them I decided to take a look for me and look what I found!!

Nike Frees!! I was eyeing these at the Nordstrom Sale (the hot punch color is obsessive). Ross had them for $32!! Even if they are white and will be dirty the minute I put them on, I couldn’t pass up the price!! A good deal is a good deal!
Pretty sure this post proves I am a cheap shopper..and I’m not ashamed. Cheap salad, free fro-yo and scored discount shoes. I love finding a good deal!

{summer days}

Today has been a great day! I started off at the gym with a quick cardio session before Body Pump. I completed this 25 minute treadmill workout.

Done and Done! I have come to the conclusion that my "long training runs" need to happen earlier in the week. By Saturday, my hamstrings are thrashed, my body is tired and there is no way in heck I could make myself run 10+ plus after teaching Body Pump. The majority of training plans have long runs scheduled on Saturday or Sundays. In my case, that just doesn't work out for me, since I train/teach so much during the week I have decided that I will do a long run on Monday mornings (during race season) when my legs are fresh (since Sunday is my active recovery day). Then tamper it down throughout the week.  I'm excited to see how this works out, hopefully it will help me get it done besides just walk away from a training run.
Next weekend, I have another Relay coming up. It will be EPIC.
After Pump I came home and as a family we wanted to go swimming so we headed over to the Rec center for some pool time!
The babies actually did really well this time!! Compared to last time..Yay!!! They loved to sit on the side and kick their feet!


There is a water fountain park as well and the babies loved playing around that.

After the park we decided that the best thing after a day out in the sun is Frozen Yogurt! Our yogurt shop got new flavas! I couldn't resist I tried them all.. But ended with dairy-free Pineapple, chocolate-coconut --> my fave!! And mango! Topped with fresh raspberries, blueberries and almonds!

We also got to be parents of 5! We got to hang out with our nieces and nephew while the SIL went on a date with her hubs! We love having them around!

They loved to push the stroller! We went to the park and the babies of course had to get in a little swinging action! They love it!

and I have some brownies in the oven...


 I picked up these brownies at the store and have been waiting to try them for awhile! The ingredient list is pretty legit! And the nutrition facts weren't to shabby.


 I used applesauce instead of butter. :)

They mix up quickly and have some chunky chocolaty love in them!


I can't wait to see how they turned out!
