..Breakfast Quiche..
Serves 4
Ingredients
- 12 eggs. (yep, a dozen)
- 1 cup chopped broccoli
- 1/2 C. chopped spinach
- 1/4 C. diced purple onion
- 1/2 of a red pepper
- 1 cup Soy Sation Mozzarella Cheese (or low fat mozzarella would work)

side note: This is my new favorite "cheese", I like it better then daiya cheese.. it melts easy and taste delicious!
Pre-heat oven to 350 degrees.
Chop all your veggies and toss into casserole dish
Break egg whites into dish, add 1/2 cup of cheese and stir everything together.
Sprinkle the remaining cheese on top and bake in the oven for 20-25 minutes in the oven till edges are slightly brown.
TA-DA!
Top with salsa and eat with a slice of toast.
This was a perfect breakfast! I will be making it again very soon. I'm excited to try it with mushrooms, maybe even some slices of sweet potato? The veggie load possiblities are endless ;)

Q. Do you eat veggies for breakfast?
I used to not... veggies are for dinner only.. I like carbs for breakfast....pancakes, waffles, cereal.. (what was I thinking?) Quiche is where it is at! Now I pretty much eat veggies for every meal.
yummmm. How easy & delicious. Oh heck yes! Veggies all day long. Veggies are actually one of my favorite snacks (either alone with hummus or yellow mustard). Cute pic of the kiddos!!!!!

ReplyDeleteLooks delish!! Yes I try to have veggies at every meal, but some mornings they don't make it into my breakfast unless I have eggs- so I need to try this and have it a couple mornings a week!!
