Brinner

Today was one of those days that flew by!

I woke up pretty early.. My alarm went off at 5:20 and I was at GPP by 5:45. We did this workout today. I had to modify the run to a row due to my quad. I had a massage last night from my friend Stacy again. It was amazing in a “this hurts so bad, it better heal me, I’d rather go to the dentist” kind of way. This morning it was pretty sore in a good way. Stacy is very thorough. She knows exactly how and what to do to help heal my injury. She focused on my right quad for 45 minutes! Pushing, rubbing, pressing and seriously using her body weight trying to get a large knot to release. She was very attentive and knowledgeable in what she does. Tonight it is actually feeling good. I’m going back tomorrow for a little more before the race on Saturday!

This morning I decided I’m going to focus more on eating on plates since it is something I haven’t been very good at lately. I came home from the workout and made breakfast and put it a plate!

Nothing special, just eggs, green beans, and spinach, topped with some cherry tomatoes and half of a grapefruit.

We  spent the afternoon at the pool with some friends. It was my first time taking the twins by myself. They did good considering but like to go there own directions Winking smile.  I didn’t have one extra hand to take a picture, but they actually got in the pool and splashed around! (T & B haven’t been exactly water babies..)

The twins both crashed on the way home from the pool, which left me to make a lunch, put it on a plate and actually sit down to eat it. All of it.  As a mom, that is a rare occasion.

I made some mahi mahi in a skillet with some olive oil, lemon juice and garlic with Mrs. Dash  lemon pepper seasoning. Roasted green beans served on the side, along with half a nectarine and half frozen banana that was snacked on while the fish and beans were cooking.

Mahi Mahi isn’t a fish I have to often but it was on sale so decided it was a good pick.

When it was time for dinner, I had committed earlier in the day to make a breakfast for a friend that is allergic to dairy, gluten and some nuts.

Brinner it was! Breakfast at dinner = brinner! 

I decided to make my own version of  eggo waffles. So I could freeze them and she could just pop them in the toaster! I use coconut flour in most of my baking and love it. It is kind of a tricky flour to use. It thickens quickly with just a small amount, so you don’t have to use a ton of it.

I found this recipe and adapted it to fit the needs of my friend.

Coconut Waffles

Grain-Free, Sugar-Free, Dairy-Free
Makes 8 waffles

  • 6 whole eggs
  • 1 1/2 C. Egg Whites
  • 2 tbsp. coconut oil, melted (or bacon grease)
  • 2 small, well-ripened bananas
  • 2/3 cup Plain Coconut Milk (I used silk
  • 4 tsp. vanilla
  • 2 tsp. Agave nectar
  • 2 tsp. Cinnamon
  • 1/2  tsp. salt
  • 2 tsp. baking soda
  • 1 cup coconut flour

Heat up waffle iron and just throw all ingredients into your blender and blend on medium/high until well combined.

That’s a lot of eggs. Just how I like it.

Pour into waffle iron until cooked.

These are Paleo friendly, gluten, dairy, nut free. Low carb, high protein, filling but light and fluffy just like the good stuff.

Now it’s time to sign off for the night! I’m still working on that whole “sleep 8 hrs. a night” thing. I’d like to just refer my insomnia lately as Ragnar training.

Give it a try.

Late night blogging. Seems to be the trend lately…

I am going to admit, I have not been very good at a few things lately.

1. Going to bed at a decent hour.

2. Getting ready.

3. Eating actual meals from a plate.

4.Taking pictures of my meals- (Probably because of #2).

5. My June Challenges

1. Instagram photo of the day challenge.. I do some but not all.

2. Running streak- The quad put a hanker in that one.

Things I have been doing good at.

1. Drinking water.

2. Stretching, Rolling, and Icing my quad. (Which is still bothering me.)

3.Getting my workouts done in the AM.

4. Eating fruits and veggies.

Here are a few things I probably will NEVER be good at.

1. Resting injuries. Yes, I still workout when I am injured, but not with 100% effort, especially if there is any jumping, squatting or running. I’m getting better at listening to my body but I don’t like to agree with it sometimes.

2. Listening to voicemails and returning phone calls. I kind of hate talking on my phone. Especially right now because I shattered my screen again and the sensor is broke so I put people on hold or hang up at least 3 times during the conversation.

3. Keeping my amazing white linoleum floor clean. – Take today for example.

That would be protein powder.

It is obviously the new sandbox. Not a very cheap one, at that.

You can’t win them all. But here is something I will always remember.

Lets give ourselves a little credit each day for the small things. I’m sure we each deserve it.

Injury & Fro-yo

The past few days has been a little hectic in our household. Bee got a lovely rash from somewhere and has been a pretty happy girl considering the red itchy skin that took over the majority of her limbs. The nights have been a circus! Which is not very common, Bee and T are usually great sleepers! But since our trip both babies have been waking up at different times throughout the night and both Brent and I are just plain exhausted.  I think they are either growing or their pre-molars may be erupting. Who knows? But I’m hoping they get back on their sleep schedule soon!!

I also am having some pain with my right quad. It flared up after my awesome trail run. During that run I almost took a fall while running down the trail and caught myself with my right leg but when I did that I must of strained it. Eff. After the GPP workout on Thursday I could barely walk after, and same with Friday. I took Friday night off of teaching and went for a walk with the dog and kiddos. Saturday, I  taught Body Pump feeling  okay (No lunges and only half squats with light weight). After Body Pump, I decided to go on a nice flat, slow run to test it out. Every step hurt. I should of stopped right when I started but I was hoping/praying it would work itself out as I got moving. At mile 2, I stopped to tie my shoe and when I stood to run again it hit me like a knife to the quad. I sat down and gave it a quick rub and punch to the gut and decided it was time to head home. I didn’t have my phone with me so I had to trek it back. I was able to run back but it wasn’t pretty. Injuries are SO frustrating to me.  I was just feeling almost 100% with my hip and was gaining back mileage after the marathon. Now my hip is hurting again, along with my quad. 

Crash & burn-Live & learn.

Sigh. Vent Over.

Hand over some chocolate chia pudding and call it a day.

Recipe coming. Its really simple, I just can’t figure out my measurements… it was a eye this and that day.

I have a Ragnar race this weekend and I am now super nervous for it. I have a massage scheduled Tuesday to help work it out and I plan on resting and icing it for the most part. I have to teach a couple times this week also, so we will see where I am at come Friday.

We spent the majority of the weekend hanging out at home. We were quarantining Bee from other kids, just incase her rash was contagious. We went to the Doctor and he wasn’t 100% sure what it was gave us a few possibilities and told us it should clear it self up in a few days and sent us on our way. SO glad I drove 30 minutes, paid my not so cheap co-pay, to just get sent home 5 minutes later with that note. (Insert sarcasm here) Lesson learned. Heck, I was just as good off googling it.

Poor babe, It didn’t seem to really bother her and its already starting to look better! (I’m wondering if it was my laundry detergent switch?) But she did have a slight fever for a day, so it throws off my guess.

After Brent and I got our runs done on Saturday (Side note: Brent ran his longest distance to date 6.25 miles! He is addicted but has yet to admit it…)

I had a quick drippy egg salad with some of the most sour grapefruit I have ever tasted. I ate it anyway.

I roasted some peppers and sweet tomatoes in a little olive olive oil before adding 3 egg whites along with 1 whole egg. When the egg white turns white pour about 1/2 cup of water in the pan and covered it with a lid for about 5 minutes. You have to watch it and be careful not to cook the yolk!

You have got to get the drip!

Then we decided to take the babies to the Zoo again! They absolutely love it, so we decided to just get annual passes so we can go often. Did I take one picture? Nope. We were only there for about an hour before deciding walking around the zoo wasn’t to smart of an idea with my quad.

We came home had a quick fish dinner

and hung out outside on the front lawn to let Tikka get some her cooped up puppy energy out. Then settled down with a little Orange leaf run and a movie.

Sometimes girls just need some fro-yo. Orange leaf is good fro-yo, but it doesn’t over power my red mango. We just need one closer to us. And yes, we took the twins in their PJ’s. But Bee accessorized with her pearls. My girl has glam.

Salad in a Jar

Hey guys! Happy 6.6.12!!!

6+6=12 Cool, right? I’m a little obsessive about numbers and get a kick out of dates like today! I know this chick does to.

I started my day at GPP with the side slayer workout! It targets the oblique's from every angle  and I’m already feeling’ it! If your looking for a little extra inspiration to get your workout in check out the comments in todays post on the GPP site! I LOVE everything about the GPP community.

Today was also National Running Day!! Did you celebrate? I did!

I did my first trail run of the year. There is a trail in bountiful in Mueller Park canyon that goes up to Elephant rock. Which is more like a huge boulder, that I guess looks like an elephant? I don’t see it, but that’s just what the folks around here call it.

Brent biked the trail earlier today, so when he got home I was itching to go run it. I sent out a mass text to a few friends and got two friends, Stacy & Melissa to join in on the fun.

I forget how much I LOVE trail running. As close as this trail is to home, I get that feeling like I’m in the middle of the forest, far, far away from civilization. The smell of pine is refreshing and crossing bridges, running along rivers are refreshing in so many ways. The trail is about 7 miles round trip. It is a good climb up, and when you reach the top there is an amazing view.

I didn’t bring my camera/iPhone with me but luckily Stacy had hers, so we were able to snap this pic but it does no justice for the view or my hair... I’m going to make this a weekly run, so I’ll be sure to snap better pics.. next time.

On my way home, I noticed one of my brothers was playing a game on the baseball field so I stopped by right on time to see him up to bat and get a run for his team! What a rock star!

Today, okay, last night while I was trying to fall asleep I was thinking of ways I could bring my salad on the go. This summer is going to be busy and we are going to be out and about a lot. I figured I could put it in a Tupperware but then my lettuce would get all soggy with the dressing. Then I thought, “what if I put it in a JAR?”. Put the dressing in the bottom, veggies (that don’t get soggy easy) lettuce, spinach, sliced almonds, chicken, tomatoes, peppers, anything really. Then when I am ready to eat, you can just shake it and eat it.

Awesome right? I’m excited to try different versions of salad jars. Strawberry walnut, chicken Caesar, Taco? The options are endless.

Blueberry Turkey Burgers.

Hey guys! Hope your week is going good so far! Saturday I started feeling a little scratch in the back of my throat, I taught pump sounding like a man, decided to run just one mile afterward instead of the planned five. Got to keep up with the challenge!  Sunday, I woke up with NO voice…then my blowdryer broke, which if you have a curly, frizzy “mufasa” mane like me this is not a good thing…. (Just go with me on this tangent). I went to church with no voice, wet hair and was looking like a hot mess. However, I did get to wear a new skirt, which made me feel better up until I was asked to read something and I just squeeked out the words the best I could which sent me into a cough attack. Seriously, who is that lady with wet hair and sounds like a 80 year old smoker.. Awesome right?
Then I  came home and made cookies, because that is just what you do to make yourself feel better about anything right?

I didn’t have any chocolate chips so I went with blueberries. You would never guess it, but these cookies were awesome. In a “buttery”, healthy, coconut, antioxidant kind of way.
Monday, I woke up STILL sounding like a smoker and had THIS workout to do. Fitzoner is a benchmark workout at GPP and it is one I love to fear. I hold the record for completing this workout in 11:59 which I have gotten twice, so when I saw it pop up again Sunday night I knew I wanted to try and beat it. Third times the charm right? But I didn’t want to do it yet.. Because I wasn’t feeling 100%
Alas, the sickness got to me. I finished the mile in 6:34, the back of my throat was on fire, in a bloody, metal tasting way..  As I made my way through the squats, pull-ups and pushups I had to stop twice to cough. Ew. I finished in 13:41. Next time I’ll be ready.
I took the night off of Attack and made dinner instead with a side of bachelorette.
BLUEBERRY TURKEY BURGERS

Ingredients:
  • 1.5 pds of lean ground turkey
  • 2 eggs
  • 1 small sweet potato shredded

  • 1/2 C. Blueberries (fresh or frozen)
Directions:
Mix all ingredients together into a bowl using your hands. (I know its sick, but kind of fun at the same time)

Form into patties

Grill.

Wow. The I phone takes amazing pictures.
Anyway.. Meat + Fruit + sweet potato. Yep, I just did that and it was awesome. Weirder things have been done, like fruit on pizza. (turkey & blueberries > pineapple and ham).
Smash it the middle of brown rice/whole wheat bun with toppings of your choice or just top it on a bed of spinach/salad and scarf it.

It may not be a cure for a sore throat and it does absoluteley nothing for my mufasa hair, but a burger fresh off the grill is good for the soul.
We decided to have some corn on the cob for a side and grill a peach for dessert but were so surprised how good our burgers were we completely forgot about the grill for awhile.

June Challenges

 

Can you even believe its JUNE! Summer is going by faster then I want it to already!!

This morning started off with this workout! I even ran into this chick! Today is her birthday so head over and drop her note. Happy Birthday J!

I was going to go for a little run after the workout but ran out of time and figured I could use a little fuel before hand. I headed home for a recovery protein shake served as Breakfast

In the mix

  • 3 strawberries
  • 1/2 banana
  • handful of spinach
  • 1 scoop chocolate protein
  • water/ice

That run never happened this morning because we spent the rest of the morning at the zoo!

With the rest of Utah. It was the last day of school around here and it seems many celebrated at the zoo. Then when I got home I realized it was the opening day of their new exhibit “the rocky shores”. (Now, that explains all the news cameras/radio stations there.) The new exhibit was packed but we were able to get a front row by the seals. The polar bears were a loss.. we couldn’t get close enough. I want to go back soon because I love polar bears and once the exhibit hype goes down we can go hang out with them.

Grandma Joy (FIL new-ish wife) came with us to see the seals and on the train!

T LOVED the Choo-Choo train! Bee wasn’t to sure about it but once we got going she didn’t want to get off!

We had a great afternoon at the zoo! They both loved seeing all the animals! Especially the monkeys and the elephant. Bee however favored the kitty.

The twinners were out in about 2 minutes on the way home. Which lead into a 4 hour nap. I used the time to fold a mountain of laundry.. ugh. And make a delicious lunch! YUM!

I am a huge fan of this tilapia! I seared it in a skillet with some olive oil and Mrs. Dash Lemon Pepper!

It served as my protein source on top of all those veggies!!

Friday nights are full of fun around here.

We went for a run… I know, party animals. At least I didn’t have to do my hair. Winking smile

Brent works late on Friday nights, but when he was on his way home he text me and asked if I wanted to go for a run.

Did he really need me to answer that?

Of course I will!!---> I may turn him into a running addict too. Maybe.

We did a quick 3 ish miles. I didn’t wear my garmin or carry my phone. We pushed the babies and just enjoyed a relaxed run with conversation. Nothing like catching up with each other on our day during a run.
