fat tuesday

Hey loves, just so you know.. Last night was an epic SNOW STORM.. yes, its March. I'm ready and excited for spring.. but this proves that the groundhog is a liar face.
(I may or may not of been taking pictures while I was driving..) 
Last night I was driving on the freeway.. going 10 mph.. for 8 miles.. Through the storm! I had my sister with me because we joined a SOCCER league!!! yes, I am fully aware that I have NEVER played soccer in my life.. My sister is a pro. and 2 of my cousins play also! We had a blasty. Although we arrived a half hour late... but arrived to find out the other team forfeited. (awesome, that would of been good to know BEFORE we risked our lives driving..) But we rummaged for a bit, the practice was well worth it. I learned how to put shin guards on. (those are important if you aren't soccer savvy) I didn't take any pics..(storm, late, panic.etc)  but we play once a week.. so I promise some next week! mmmk?
SOOOO  TODAY is Fat Tuesday! Did you celebrate? I sure didn't.. but who would that really surprise? I'm with Gina on this one..I'm calling it FIT Tuesday, In fact I did a "two-a-day" today to celebrate it. This morning I stormed through the GPP workout I set a new PR thanks to Ashlan.. she is one tough chick. It was hard to keep up with her. Afterwards we hit it out to Salt Lake for baby T's helmet appt. 

Everything is going well and right on track! He doesn't have it on in the picture because the Dr. instructed us to leave it off for an hour after the appointment. So he has helmet hair ;) I can already tell a difference in a week.
After his appt. I was starving!! Being in Salt Lake I was craving one thing.

We don't have a whole foods in Bountiful, so whenever we have time to make a quick stop for the hot bar, you know I'm going to take advantage of it. And the best part Brent came with us so it was a fun family date. 



I went with a Brussel sprout salad and lemon rosemary chicken breast. It was SO good and so filling!!
But I saved room for my impulse treat..which Brent and I split. 
It was my first time having a BOBO's bar and it was perfect little oat cake. Overall, It was good and I could of eaten the whole thing myself. 

I got a 4 mile run in and hand some time to jump into my friends Boot Camp class which was a crazy tabata that kicked my trash. I love tabata work outs and will post one soon for you to do at home!! They seriously rock your socks off! 

Dinner was a quick and easy meal...
Spinach Salad with Chicken and chopped red bell peppers and apples drizziled with balsamic vinagrette. It was 6:30 when I took this picture.. It looks really bright.. (probably the reflection from the snow!) or longer days because Spring is coming?? (in my summer dreams)

egg scramble how to.

Hey everyone!! Hope your week is going well!! Its been a whirlwind so far, but I am happy to announce we are all 100% now and feeling great!! SOOO glad to have my happy babies back and the fact that I can finally breathe through my nose!! YAY!! Big secret... antibiotics + Mucinex D!!!!


I have had a few requests to tell you how I make my egg scramble. Its so easy! Don't let raw veggies scure you from a good and nutritious breakfast!  Here is a little refresher..

Heat your pan,spray with canola oil and throw your raw (super food) veggies (your choice) on. I used broccoli & red pepper. (onion would of been uhhhmazing.)
Let them steam for about 5-7 minutes 
Add your egg whites, I use about 4 eggs.(I forgot to take pic) 
Let them cook for about a minute and mix it with a spatula then add the spinach
mix it up
&
cover with a lid
Let it steam for a minute

ALL done!
Kind of looks messy but thats why its an egg scramble.


Breakfast is served!! 

Eggs are an amazing way to start your day!! This meal keeps me full and satisfied for the whole morning!

Best Waffles Ever!

I just want to say thank you for all the positive feedback from my last post! I loved reading all of your positive fitness goals! They were perfect!
So to the title... I have always tried to make protein waffles, but they would turn out either really dense and sort of flavorless and not the fluffy delicious waffles we all know and love. Well, today I am a food genius. I'm just not saying that either. YOU have to make these!.. Like now.

Perfect Protein Waffles

Ingredients

(yields about 6 waffles)

  • 1 cup Oat Flour
  • 1 cup Old Fashioned Oats
  • 2 Scoops of Vanilla Whey Elite Protein (Any vanilla protein would work probably)
  • 1/4C Vanilla Greek Yogurt (I used the Kroger Brand)
  • 1/2C Fat Free Cottage Cheese
  • 1 C. Unsweetened Almond Milk
  • 1 egg
  • 1 egg white
  • 1/2  tsp salt
  • 2 tsp Baking Soda
  • 1 cap full (1/2 tsp?)  of Vanilla Extract


Simply Mix ALL ingredients in your blender

Spray your waffle iron with canola oil and pour into hot waffle iron!
I kinda made a mess the first round.. WAFFLE OVERFLOW..
don't mock me. I know you've all done it..

then I was a little to conservative;)

Top with your favorite toppings 
berries, pure maple syrup and whip cream 
(from december..?how long does that stuff last in the spray can anyway?? oh well.. it tasted fine.)

heres the skinny..

Hey everyone!! Hope your weekend is going well so far. I started out my morning by playing with these 2 little munckins in my bed at 5AM... okay.. they were playing while I was trying to stay asleep.. Finally decided that I wasn't going to win and got up. I teach body pump on saturday mornings so I ate my breakfast and left to go to work. (I love that fitness is actually my job) Then I was supposed to have a long run today.. 11 miles, but I'm still battling the mucus in my brain and cough but was able to get 8.41 before I just gave up.

I had a good conversation today at the gym, After my class a young lady came up to me and asked. Will this class make me skinny? (She was not extremely overweight or anything). I simply asked her. "Well, what is your goal? Do you want to be skinny or do you want to be fit? She looked at me kind of confused and said, Isn't being fit being skinny?

I explained my thought. Whatever your goal is. Make it a FITNESS GOAL. Instead of saying.. I want to be skinny.. Try,  I want to be FIT!!! Then make it into a positive statement. Such as, I want to be fit by being able to complete a half marathon, Or I want to be fit by lifting an "x" amount of weight. Challenge yourself in each of your workouts by pushing yourself to a positive fitness goal. DO NOT simply say.. I'm going to go run so I can be skinny.
This made sense to her. She agreed then asked me another good question. "Why were you lifting such heavy weight today in class?"
Well, My fitness goal today was to lift heavier or the same weight as my friend in class. I kind of giggled.. but that really was the truth.. (we are kind of competitive with each other) But I also explained that I have been teaching this class for a long time and this weight is what is challenging to me.
"Aren't you going to get all big and bulky if you lift heavy"?
NO!!! This is the biggest myth in the fitness world. Lifting heavy WILL NOT make you look like a man.. thats what steroids are for. Lifting weights will help you burn fat, and achieve the nice toned look we all strive for. I always challenge everyone in my class, especially the ones that have been coming for a while to add weight to their bar. You will get quicker results if you challenge yourself.

SOOO Here is the skinny.

Most woman work out to lose weight. Yes? If you go ask some random lady at the gym on the treadmill what her goal is. It will most likely get the answer -- To lose weight. Well, great.. how much weight? How are you planning on doing that? Can you make it more positive because to just "lose weight" sounds like a drag.. and not realistic. Its missing something, don't you think?
In this society, especially with young girls there is so much pressure to "be skinny". Whether it be influenced by the media or even their friends. When "to be skinny" is your goal. You will probably never achieve it. Why? Because.. it will never be good enough, It turns into a downward spiral. Picking your "perfect" weight, to me is not a realistic goal. Because you will get there. If you keep up with your positive fitness goals each day.
I believe that if you keep a FITNESS goal in mind, you are more likely to achieve it. Be positive, find something everyday that you like about yourself and CHALLENGE yourself to be the best you can be.
BE HAPPY. Don't get frustrated. You will reach your GOALS!!
To that young lady at the gym, to answer your question--- No, this class will not make you "skinny". But if you come challenge yourself, work hard, eat right, reach your positive fitness goals you will be FIT!

So with that being said..

Sweet Bean Butter

Hey Everyone!! Today I discovered a new butter to love. When you hear the ingredients, your going to think what the heck? But Its so good!! I probably consume more PB, Almond Butter, White chocolate, Dark Chocolate in one day then recommended.. But I made this sweet bean butter with Peanut butter and Garbanzo beans.. Surprisingly, the bean and the nut....(I know.. weird..) They mix well and taste delicious!!!  The beans add extra fiber and protein to your peanut butter.. so you got a win-win!! Don't knock it till you try it!!

..SWEET BEAN BUTTER..

Ingredients


  • 1 cup of Garbanzo beans
  • 1/3 cup Natural Peanut Butter 
  • 1/3 C. Agave Nectar
  • 1 tbs pure maple syrup 
  • 1 tsp vanilla extract
  • 1/4 C Chocolate chips 65% or more cocoa.



HOW TO MAKE:

Mix the first five ingredients in your food processor until smooth.

smooth and creamy

Transfer into a container and stir in chocolate chips! 

saved for lata..

Use as desired!! Spread on bread, rice cakes, dip cinnamon crackers in it or just eat it with a spoon. Finger works very well also......... Its so easy to make!!! 

I love it on toast!!

Spinach Spinner

Hi friends!! So I totally wrote a post yesterday.. and my pictures were taking FOREVER.. so long, that I went to bed and woke up to the post completely gone.. :(  I'm not going to re-type it all but here is a quick re-cap..
IT WAS... national peanut butter lovers day.. I celebrated with my favorite PB
I could just eat this with a spoon.. oh wait... I do that. ;)

T had his fitting for his helmet.. If you a new reader, my little boy was diagnosed with plagiocephaly, which is really common with twins. The back of his head has a flat spot and the helmet will help shape his head. At first...


Then after a few minutes he was just fine. Now that we are home he doesn't even notice it. So all is well. Hopefully these 8 weeks go by fast!

 And today it doesn't even seem to bother him at all anymore. I think its just harder for mom then it is for him. He will have to wear it for 8 weeks &  for 23 hrs a day, I take it off a few times to just clean it because he gets a little sweaty underneath. Thank goodness its still a little cold. Summer is going to be rough! But he still is the most adorable little boy ever!!

RASPBERRIES!! Driscoll's Raspberrys are simply suberb I LOVE them. They are sold in this large packet at costco, and they haven't had them at my location for awhile until now!! When I was pregnant I probably went through a whole container in 2 days.. !!!  How I have missed them!
Raspberries are amazingly beneficial to any diet. Not only do they contain antioxidants, fiber & vitamins, they contain ellagic acid that helps prevent cancer and help burn fat. They contain fiber and manganese. (Manganese is a mineral that assist with keeping your metabolic rate high, in turn burning fat.)
I went a little wild this morning with my oats..
Raspberries, Blueberries, gourmet vanilla protein powder, cinnamon and almonds.

Even Lunch today, there was a little Raspberry love..

Chicken Spinach Salad- inspired from my shrimp salad the other day, I even drizzled my leftover dressing over the top! 

3 Cups of Spinach
1 Cup of Green Beans
8 oz Chicken
1/4 cucumber
1/2 red pepper,
1/2 a 1/2 of avocado
+ a whole lotta raspberries..
..Great Spinach Spinner..

So good!!
